  2. 1 medium onion, chopped
  3. 3 cups rotini pasta, uncooked
  4. 3 1/2 cups water
  5. 1 (26 ounce) jar spaghetti sauce
  6. 1 cup sliced mushrooms
  7. 1 cup chopped red peppers
  8. 1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

2. Cooking Directions

  1. Brown meat large deep skillet; drain. Add onions; cook until tender.
  2. Add pasta, water and spaghetti sauce. Bring to boil; cover Reduce heat to low; simmer 15 min., stirring occasionally. Add mushrooms and red peppers; cook 5 min.
  3. Sprinkle with cheese.

    I absolutely LOVE this recipe! It's quick and easy to make, and I get great leftovers. It's just as good out of the microwave the next day as it is out of the pan. Since I live alone and the only other person who eats with me is my boyfriend, this is a great dish to make once and get several meals out of it.

    I do play with the recipe a little. I use a LOT more than 1 cup of mozzarella....I try to completely cover the top of the mixture with cheese. I also use specialty spaghetti sauces (my current favorite is the Chunky Garden Combination by Ragu) to add some more flavor. I omit the red peppers and season the beef with a hefty amount of garlic powder while I'm browning it. I also brown the beef with the onions instead of adding the onions after I drain the beef.

    If you use the recommended amount of water, the sauce gets somewhat runny. I cut back to about 2 1/2 cups of water, and it might help to add some more spaghetti sauce.
