1. Ingredients

  1. 1 (18.25 ounce) package white cake mix
  2. 1 cup boiling water
  3. 1 pkg. (4 serving size) JELL-O Brand Strawberry Flavor Gelatin
  4. 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed
  5. Few drops food coloring, any color
  6. 24 JET-PUFFED marshmallows
  7. 24 JET-PUFFED Miniature Marshmallows
  8. 1/4 cup colored sugar or colored sprinkles

2. Cooking Directions

  1. Prepare and bake cake mix as directed on package for 24 cupcakes; cool completely. Pierce cupcakes with wooden skewer or large fork at 1/4-inch intervals. Stir boiling water into dry gelatin mix at least 2 min. until completely dissolved. Spoon 2 tsp. of the gelatin over each cupcake. Refrigerate 3 hours.
  2. Tint whipped topping with food coloring; spread about 2 Tbsp. of the whipped topping onto each cupcake.
  3. Cut each large marshmallow crosswise into five pieces with clean kitchen scissors to resemble flower petals. Arrange five of the petals in flower shape on top of each cupcake; place a miniature marshmallow in center of each group of petals. Sprinkle each with 1/2 tsp. colored sugar. Store in refrigerator.

Yield: 24 servings

3. Still Hungry?

These delicious cupcakes have a decorative marshmallow flower on top.

Substitute

Prepare as directed, using your favorite flavor of JELL-O Brand Gelatin.

Variation - Flower Power Cake

Prepare and bake cake mix in 13x9-inch baking pan as directed on package. Cool cake in pan on wire rack 15 min. Poke holes in cake and continue as directed.

    This recipe was so great my mom, grandparents, friends and I loved them so much. It\'s like your taste buds went to heaven. There so good that I\'m going to serve these at my birthday party coming up I know everyone will love them. With the marshmallows, jello, and sprinkles its so good. If someone asked me what would you do to change this recipe I would say nothing because it has everything that should be in there. The only thing that I wish I knew was the nutrition facts. But this recipe was so great. Everyone should try this recipe if you dont then your really missing out on something so delicious.

    Not every single recipe has to have a the approval of the food police.

    Sometimes (especially with birthday, and holiday fare) food is part of our "memory making" and has a value that far surpasses our "daily nutritional needs."

    And, sometimes, food is just for fun. My MIL used to make a version of these marshmallow flowers and this recipe reminds me of her, and her efforts to make food memorable. Yes, she also served Brussels sprouts, squash, and Cornish Pasties, chicken, lamb, salads, and vegetables galore. She was a great "nutritional" cook, but this recipe reminds me of the time my seven year-old daughter was presented with "the prettiest cake in the world" courtesy of my MIL, and the magic she could create with a fluffy frosted layer cake, a bag of marshmallows, a pair of sharp kitchen shears, and assorted pastel colored sugar crystals. My MIL covered the top of the cake with pink, yellow, turquoise, orange, and lavender "marshmallow flowers" that cascaded over the edge and around the sides. And, while that cake may have been laden with calories, the memory of my MIL\'s efforts, and my daughter\'s eyes, will last forever.

    This was excellent, easy to make and decorate. Even my husband liked it and he is not big on cake. I\\\'m going to make this again for my daughter\\\'s b-day treat at school, but I am going to try it will the small marshmellows to make small flowers on the cupcakes.
