Notes:

Keeping It Safe

Frozen shrimp can also be used to prepare these appetizers. To thaw the shrimp, place the bag of frozen shrimp in the refrigerator and let stand until thawed. Or, place the sealed bag of shrimp in a bowl of cold water and let stand until thawed, changing the water every 10 minutes. Never thaw the shrimp on the countertop.

They do indeed look delicious! But beware as the carb count cannot be 0 (zero) with a ritz cracker (Regular ritz is 10 grams of carb per serving). The cream cheese itself has a minimal amount of carbs (1-2) per serving.

I made these on Christmas eve, they were very easy! except I used medium shrimp, the large are too big for the crackers, leave the tails, they add to the rustic look! I placed them on a cake pedistal stand with a candle in the middle, they looked so pretty with the red and green onion! They tasted as good as they looked, everyone was very impressed, even the non eating shellfish people commented on them!

My husband and I have been enjoying this appetizer for years. Great as a snack or light meal when combined with other appetizers or olives and a glass of wine!
