  1. 4 ounces PHILADELPHIA Cream Cheese, cubed
  2. 1/2 cup KRAFT 100% Grated Parmesan Cheese
  3. 3/4 cup milk
  4. 1/4 cup butter or margarine
  5. 1/4 teaspoon white pepper
  6. 1/8 teaspoon garlic powder
  7. 8 ounces fettuccine, cooked, drained
  8. 1/8 teaspoon ground nutmeg

2. Cooking Directions

  1. Mix cream cheese, Parmesan cheese, milk, butter, white pepper and garlic powder in medium saucepan; cook on low heat until cream cheese is melted and mixture is well blended.
  2. Toss with hot fettucine. Sprinkle with nutmeg.

Yield: 4 servings

    I substituted the regular cream cheese with neufachel (reduced fat) cream cheese. Not only did it bring the overall fat content down, but I couldn't really tell a difference. I also used 1 percent milk for another low fat option. I didn't know if skim would give me the right consistency or not, so I stuck with 1 percent.

    Most of the other alfredo recipes I've tried used heavy cream. This one was pretty good overall for a healthier and pretty easy recipe. Not the best alfredo I've had, but good for the amount of effort to make.

    This was a very easy recipe and very quick. I didn't have much time, and I don't like to cook often, but this was easy. A little more milk to make it a little creamier because it seems creamy when you are making the sauce but once it is mixed with the pasta it is a little dryer than it should be. And a little garlic salt mixed in with the garlic powder can help also... Overall, I'll make it again and next time it will be better!

    Great recipe, and yea a little more milk makes it better. As for the med student down towards the bottom of the page, no where on the recipe title does it say it is a healthy meal!! You should pay attention to what you read before making comments!!

    I cooked this for my girlfriend (a med student) and I and it was real good. The med student that wrote a review earlier needs to learn something called substitution....something the brainiac economists (myself) are familiar with. I used skim milk and fat free cream cheese and it turned out very good.
