1. Ingredients

  1. 4 (4 ounce) salmon fillets
  2. 2 cups chopped fresh spinach
  3. 1 cup sliced mushrooms
  4. 1 medium tomato, chopped
  5. 1/3 cup KRAFT Sun-Dried Tomato Vinaigrette Dressing

2. Cooking Directions

  1. Place salmon fillets, skin sides down, in 13x9-inch baking dish sprayed with cooking spray.
  2. Mix remaining ingredients until well blended; spoon over salmon.
  3. Bake at 375 degrees F for 20 to 25 minutes or until salmon flakes easily when tested with fork.

Yield: 4 servings

This easy baked salmon is moist, tender and full of flavor.

Notes:

Great Substitute

Substitute red snapper or orange roughy fillets for the salmon fillets.

    This is SUPER easy, healthy and it's delicious. I marinated the salmon before hand in the dressing and it gave the salmon even more flavor. I recommend this to everyone who likes salmon and even those who are a little hesitate, there's not a big fish taste. Enjoy!!

  • Great Variation for Salmon

    This was such a simple yet flavorful dish. I took the advice about marinating the salmon first, I was generous with the dressing. So I just prepared it all in my baking dish and wrapped it up and allowed it to sit in my fridge for about an hour. Pulled the dish out for about 30 minutes or so prior to putting it in the hot oven. ( didn't want to break my dish). It was so tasty. I served it up with sourdough bread. Adults and kids loved it. Definitley will continue to make this.

    Wow! Great dish! When I told my boyfriend I was making salmon he was not happy. When i told him I bought farm raised salmon he ws really not happy. When we tasted the dish he was ELATED! He told me it was the best salmon dish he had ever eaten! WOW! That makes me happy. I'm glad i didnt let him influence me into making something else for dinner.
