1. Ingredients

  1. 2 cups STOVE TOP Stuffing Mix for Chicken in the Canister
  2. 1 cup hot water
  3. 16 large mushrooms
  4. 3 tablespoons butter or margarine
  5. 1/2 small green pepper, finely chopped
  6. 1/2 small red pepper, finely chopped
  7. 2 tablespoons butter or margarine, melted

2. Cooking Directions

  1. Preheat broiler. Mix stuffing mix and hot water in medium bowl; cover. Let stand 5 min.
  2. Remove stems from mushrooms; chop stems. Cook and stir mushroom caps in 3 Tbsp. butter in large skillet until lightly browned. Arrange in shallow baking dish.
  3. Add stems and peppers to skillet; cook and stir until tender. Stir into stuffing. Spoon into mushroom caps; drizzle with 2 Tbsp. melted butter.
  4. Broil 5 to 7 inches from heat 5 min. or until heated through.

Yield: 8 servings

3. Still Hungry?

Large mushroom caps are filled with a blend of stuffing mix, chopped mushroom stems and bell peppers then broiled for easy and delicious appetizers.

Notes:

To Halve

Cut all ingredients in half. Prepare as directed.

    This recipe was exactly what I needed. So good, I could of ate the whole thing by myself. I did add a few things to mine, after browning I added some finely grated Fontina Cheese a small amount of minced garlic and then I piled on the Stove Top Stuffing Mix; i finished it with a sprinkle of Grated Fontina Cheese and then browned it in the broiler. So good, can\'t wait to do it again.
