1. Ingredients

  1. 1/2 pound ground beef
  2. 1 (11 ounce) can whole kernel corn, drained
  3. 1 1/2 cups TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa
  4. 1 cup BREAKSTONE'S or KNUDSEN Cottage Cheese
  5. 1 (8 ounce) container BREAKSTONE'S or KNUDSEN Sour Cream
  6. 5 cups tortilla chips, divided
  7. 1 1/2 cups KRAFT Shredded Cheddar Cheese, divided

2. Cooking Directions

  1. Preheat oven to 350 degrees F. Brown meat in large skillet; drain. Add corn and salsa; mix well. Cook until heated through, stirring occasionally. Set aside. Mix cottage cheese and sour cream.
  2. Layer 2 cups of the chips, 1/2 of the meat mixture, 3/4 cup of the Cheddar cheese and 1/2 of the cottage cheese mixture in 2-quart casserole dish. Repeat layers of chips, meat mixture and cottage cheese mixture.
  3. Bake 35 minutes. Insert remaining chips around edge of casserole; top with remaining 3/4 cup cheddar cheese. Bake an additional 10 minutes or until cheese is melted.

Yield: 6 servings

3. Still Hungry?

A mix of browned ground beef, corn and salsa is layered with sour cream, cottage cheese, tortilla chips and cheddar then baked for a hearty Mexican dish.

Serving Suggestion

Serve this main dish with a mixed green salad for a quick and tasty weekday meal.

Substitute

Substitute 1 cup thawed frozen corn for the canned corn.

    i am both fortunate enough and unfortunate to live in the southwest... Fortunate because i have access to real mexican food, unfortunate in that any mexican food or recipes from elsewhere just sound horrid... Why would you put cottage cheese in this dish? And Taco Bell branded salsa?! Take my advice skip the cottage cheese, replace it with asadero cheese or even just plain old cheddar... Now concerning salsa, you should always look for a salsa made without vinegar... this allows you to taste the actual ingrediants of the salsa and not just the pickled taste... Now i will admit that i did try this casserole as it is directed, and it was not to my liking, i find that making Green Chili Chicken Enchiladas is much easier and tastier... food for thought....

    Tomato sauce?? were are you from... I can\\\'t beleive this recipe call sfor "taco bell salsa" that is really sad. People need to come to the west coast and expirience real authentic Mexicano food, and this is coming from a true Italian. 619

    This is a good recipe. I have picky children and they all loved it. I did add a lil more salsa than the recipe states but I always eyeball it when making recipes. Thanks for sharing this one.

    This was tasty but I made a change. I added more Salsa so it would not be dry and I made at least a 1lb of ground beef. The next time I will try adding a packet of taco mix to the beef for more flavor. This is a great weekend meal.
