RITZ(R) Mock Apple Pie

1. Ingredients

  1. Pastry for 2-crust 9-inch pie
  2. 36 RITZ Crackers, coarsely broken
  3. 2 cups sugar
  4. 2 teaspoons cream of tartar
  5. 1 lemon, zested
  6. 2 tablespoons lemon juice
  7. 2 tablespoons butter or margarine
  8. 1/2 teaspoon ground cinnamon

2. Cooking Directions

  1. Preheat oven to 425 degrees F. Roll out half of the pastry and place in 9-inch pie plate. Place cracker crumbs in crust; set aside.
  2. Mix sugar and cream of tartar in medium saucepan. Gradually stir in 1-3/4 cups water until well blended. Bring to boil on high heat. Reduce heat to low; simmer 15 minutes. Add lemon peel and juice; cool. Pour syrup over cracker crumbs. Dot with butter; sprinkle with cinnamon. Roll out remaining pastry; place over pie. Trim; seal and flute edges. Slit top crust to allow steam to escape.
  3. Bake 30 to 35 minutes or until crust is crisp and golden. Cool completely.

Yield: 10 servings

    It was originally a wartime dessert, when there were no apples or they were too expensive , thats why the substitution. now its just fun to make. just some fun history for you.

    This pie has been in my family for years! My dad even likes it better than apple pie. We don\'t use the lemon juice or the ritz crackers though. We just use plain saltine crackers. It is a quick and easy way to make apple pie when apples are not in season or you simply don\'t have time to slice them all up. I really recommend trying this before you make a decision about it.

    I made this when I was a young bride (back in the day) Absolutly no one had a clue it was made w/ crackers. I fooled them all. So very happy to have found it back. It is well worth trying.

    ...that people actually made this! I\'ve seen the recipe on the side of Ritz Cracker boxes, but always thought, "No Way!" I\'ll make it a point to try it out now.
    Hey, you know what would be cool? If "Iron Chef" did a competition in Kitchen Stadium to make Mock Apple Pie.

    One of my friends made this pie when I was in Elementary school and I remember it. Lately I have been told I\\'m allergic to Fruits and most Vegetables, but the apple pie was my favorite. I\\'m glad I found this recipe so I can enjoy "apple pie" again.
