1. Ingredients

  1. 1/4 cup olive oil
  2. 3 large cloves garlic, minced
  3. 1 loaf French bread, cut into slices
  4. 1 (8 ounce) package POLLY-O Whole Milk Mozzarella Cheese, cut into thin slices
  5. 6 plum tomatoes, chopped
  6. 2 tablespoons chopped fresh oregano

2. Cooking Directions

  1. Preheat broiler. Mix oil and garlic. Brush both sides of bread slices lightly with oil mixture. Place on baking sheet. Broil 1 to 2 minutes on each side or until lightly toasted on both sides.
  2. Cover each toast slice with 1 cheese slice; top evenly with tomatoes.
  3. Broil about 4 inches from heat 1 to 2 minutes or until cheese is melted. Sprinkle with oregano. Serve warm.

Yield: 24 servings

This Italian appetizer of toasted garlic French bread slices topped with fresh mozzarella cheese, tomatoes and oregano is ideal for summer parties.

Notes:

Great Substitute

Substitute 2 tsp. dried oregano leaves, crushed, for the chopped fresh oregano.

    1. Fresh mozzarella tastes better than the packaged, processed stuff (and is probably cheaper as well).
    2. Basil goes much better with bruchetta that oregano.
    3. A little red wine vinegar goes a long way is boosting the flavor of the tomatoes.

  • Lose the oregano and use fresh basil

    I thought basil was a given with bruschetta. Oregano might taste good but fresh basil over fresh mozzarella and tomatoes.......yum.

    i liked but my guest said that they shouuld add maybe eggplant to it to give more flavor. They also said it was kind of bland. overall they enjoyed!!!!!!!

    These were so easy to make. And tasty too!

    I left the bread in the oven for about a minute which burnt some of the edges. For future baking, keep an eye on them. It probably only takes about 30 seconds to toast the bread.

    They are best served warm.
