    This recipe was extremely easy and good. It was a too much for my husband and I so I took the rest to my office. Since last week everyone has asked me daily when am I going to make it again.

    I agree with the reviewer who added in garlic, red pepper flakes, etc. That would make it even better than it is. However, for this first time, I cooked it exactly as written (except for leaving out the green pepper), and, since my young children were eating it with us, it wasn\'t too spicy at all. In fact, it was very good! The add-ins would only enhance it.

    We\'ll definitely make this again...

    I enjoyed the meal but I also made substitutions. I left out the cottage cheese and I used Goya Salsa. It doesn\'t have tomato paste for a base, it is chock full of vegetables and tastes great. I use it in several recipes. I used the Mexican 4 cheese blend but you have to use a lot of it to get an actual layer of cheese. All in all, it was great!

    I made this last night! It was "okay" but my substitutions may have taken some of the zing out of it. I and couldn\'t find any corn tortilla so I used corn torilla chip rounds. It make it crunchy and added a nice texture to it. I used low fat skim Ricotta cheese after reading someone\'s review yesterday but was unimpressed. Maybe the cottage cheese would haev been better. I started to get a can of ROTEL since I use it in my chili but I hestiated and got the taco seasoning instead. I just logged on and saw where someone used the rotel. I will do that next time. I didn\'t use cumin only b/c I didn\'t have any and wasn\'t going to spend $4 on something I will only use once. I also substituted Krafy\'s low fat Mexican cheese blend instead of the sharp cheddar. I also used frozen corn and that worked great!

    Okay so I will try it again and this time add the rotel instead of the taco seasoning, use the cumin

    This is a good, easy, basic recipe that is easily modified to personal needs and tastes. For instance, because of food allergies, I omitted the salsa, bell peppers, chili powder and cumin. I added a can of diced tomatoes and a small can of chopped mild green chilies. And as other suggested, adding garnishes like sour cream and avocado really enhances this recipe.

    The Mexican Lasagna made my mouth water just reading the ingredients!! But I can\'t make it!! Oh, so sad!!

    For the past year we have been living in China and have one more year of teaching at a university before we are home. . . I haven\'t found cottage cheese here! I found flour tortillas, not corn. . .

    I did save the recipe, though, for when I am home and able to make it -- it DOES sound scrumptious!!

    Okay, to make this authentic Mexican, you shouldn\'t use Cheddar Cheese. No real Mexican eats Cheddar. If you want the cheese to melt, use Quesadilla cheese (if not available in your area, use Mozarella). I made it this way, plus I added refried beans as a layer immediately on top of the tortillas, then I placed the rest on it.

    Substitute the black olives with Jalapeño slices. I suggest Lemonade as the drink of choice. Unless you are able to get Mexican "aguas".

    What? Mexican lasagna? FYI the closest thing to this Mexican Lasagna recipe is "Pastel Azteca" now that is good not this poor take on South West (Mexican wanabe) recipe. for example the moment you put CHILI POWDER to a dish then is not Mexican, CHEDDAR CHEESE not Mexican, also Pastel Azteca is made with "Pulled Chicken" not ground beef what is this a Taco Bell Recipe? you need

    Corn Tortillas
    Cocked and Pulled Chicken
    A Can Of Corn (drained)
    Sour Cream
    Monterrey Cheese (shredded)
    Tomato Sauce (Spanish Style)
    Green "California Peppers"
    A Little Bit of Chicken Soup (for the tomato Sauce)

    and that\'s it as simple as that do the same with those ingredient\'s an That\'s Mexican (you can do a search on pastel Azteca on the web)
