We altered the recipe a bit, even tried it with ground beef, and we loved it!!! This was quick, easy, and EVERYONE loved it!!!!!

My family loved this recipe. I just made one change to it. Instead of using the velveeta cheese on top, I mixed shredded Kraft Mexican cheese with the milk and poured it on top.

Ive made this dish a hundred times and my family loves it. Theres a few things you need to change though.
Use corn tortillas and mix the chicken breast with cream cheese IT IS really good!
For the top you can use whatever cheese you like on top

No, enchiladas are not made with flour tortillas granted, but hey, in the US there are no \'tortillerias\' at every corner like in Mexico so let\'s cut people some slack. As much as I like the real enchiladas, I don\'t have time to make the tortillas from scratch, and unless one stays at home all day, no working person does. I\'ll have to agree with you on the Taco Bell comment though. Call whatever it is that they sell what you want, just don\'t call it Mexican.

Corn is yummy and why all the extra stuff just get some cheese some enchilada sauce and chicken there you go. My MIL is from Mexico she uses corn tortillas home made sauce chicken and cheese and voila!

I don\'t have a problem with using flour tortillas for enchiladas, but why would anyone want to use Velveeta? Is that even made from real food products? Ick!! Google chicken enchiladas and you\'ll find a much better recipe that\'s not quite as easy but actually uses food, not prepackaged "food substitutes."

A response to the comment about making tortillas from scratch. If you know that enchiladas are NOT made from flour tortillas, then you MUST know that you can go to any grocery store and buy CORN!!!!!!!tortillas. Maybe you should buy a cook book on authentic "Mexian Food" Those chicken enchiladas are a very POOR representation. A very LAZY GENERIC way to prepare a meal. All you need to do I fry some corn tortillas , drain the grease, dip them in enchilada sauce, place the cooked shredded chicken and cheese, roll them up, place cheese on top and throw them in the oven for 15-20 mintues. Its really not that hard

Enchiladas are NOT made with flour tortillas, let alone Taco Bell tortillas. This is an awful recipe that is only laughable. If you like this fine but don\'t call it chicken enchiladas. That would be like putting beef in (corn) an enchilada and calling it a chicken enchilada. BTW. Do you have any fish taco recipes that are made with lamb? Call it what it is not what it looks like. This is a made up concoction by someone found of Taco Bell products.
