  3. 4 ounces PHILADELPHIA Cream Cheese, cubed
  4. 1/2 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa, divided
  5. 8 TACO BELL HOME ORIGINALS Flour Tortillas
  6. 1 (4 ounce) package VELVEETA Pasteurized Prepared Cheese Product , cut up
  7. 1 tablespoon milk

Cooking Directions

  1. Preheat oven to 350 degrees F. Mix chicken, green pepper, cream cheese and 1/4 cup of the salsa in medium saucepan; cook on low heat until cream cheese is melted, stirring occasionally.
  2. Spoon 1/3 cup of the chicken mixture down center of each tortilla; roll up. Place, seam sides down, in lightly greased 13x9-inch baking dish. Place VELVEETA and milk in small saucepan; cook on low heat until VELVEETA is completely melted, stirring frequently. Pour over enchiladas; cover with foil.
  3. Bake 20 minutes or until heated through. Top with remaining 1/4 cup salsa.

Yield: 4 servings

Chopped cooked chicken is heated with cream cheese and salsa, rolled up in tortillas and baked in a cheesy sauce for a favorite Mexican main dish.

Substitute

Prepare as directed, using PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese and VELVEETA Made With 2% Milk Reduced Fat Pasteurized Prepared Cheese Product.

Shortcut

Substitute 1 pkg. (6 oz.) OSCAR MAYER Oven Roasted Chicken Breast Cuts for the chopped cooked fresh chicken.

    We altered the recipe a bit, even tried it with ground beef, and we loved it!!! This was quick, easy, and EVERYONE loved it!!!!!

    My family loved this recipe. I just made one change to it. Instead of using the velveeta cheese on top, I mixed shredded Kraft Mexican cheese with the milk and poured it on top.

    Ive made this dish a hundred times and my family loves it. Theres a few things you need to change though.

    Use corn tortillas and mix the chicken breast with cream cheese IT IS really good!

    For the top you can use whatever cheese you like on top

    No, enchiladas are not made with flour tortillas granted, but hey, in the US there are no \'tortillerias\' at every corner like in Mexico so let\'s cut people some slack. As much as I like the real enchiladas, I don\'t have time to make the tortillas from scratch, and unless one stays at home all day, no working person does. I\'ll have to agree with you on the Taco Bell comment though. Call whatever it is that they sell what you want, just don\'t call it Mexican.

    Corn is yummy and why all the extra stuff just get some cheese some enchilada sauce and chicken there you go. My MIL is from Mexico she uses corn tortillas home made sauce chicken and cheese and voila!
