Pineapple Cheesecake

1. Ingredients

  1. 1 cup finely crushed NILLA Wafers
  2. 3 tablespoons butter or margarine, melted
  3. 1/2 teaspoon ground cinnamon
  4. 1 envelope KNOX Unflavored Gelatine
  5. 1 (8 ounce) can crushed pineapple, drained, liquid reserved
  6. 3 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
  7. 3/4 cup sugar
  8. 1 (8 ounce) tub COOL WHIP Whipped Topping, thawed

2. Cooking Directions

  1. Mix wafer crumbs, butter and cinnamon; press firmly onto bottom of 9-inch springform pan. Set aside.
  2. Sprinkle gelatin over reserved pineapple liquid in small saucepan. Let stand 1 minute. Cook on low heat 5 minutes until gelatin is completely dissolved, stirring occasionally. Beat cream cheese and sugar with electric mixer on medium speed until well blended. Gradually add gelatin mixture, mixing until blended. Refrigerate until slightly thickened.
  3. Add pineapple and whipped topping to gelatin mixture; stir gently until well blended. Pour over crust. Refrigerate several hours or until firm. Store leftover cheesecake in refrigerator.

Yield: 12 servings

    I tried this recipe for a family get-together, and it didn\\'t set up correctly (even being refridgerated overnight). The next time i tried this, i used two envelopes of the gelatin, and it was perfect. :) this weekend, i am using grahm crackers, and using fresh strawberries instead of the pineapple. :)

    This recipe is great for a summer time Cheesecake fix. Graham crackers work great for crust.
