  • great potato salads

any good potato salad needs to sit and meld for several hours at least. I have found that every potato salad that I made tasted much much better after sitting and chilling over night.

And leave those skins out of my salad please.

Coating potatoes never results in "GREAT" potato salad. When preparing potatoes - cube new potatoes with skins in salted boiling water - drain and when too hot to handle add chopped onion with an Italian type dressing (just enough to coat potatoes) cover and let stand 20-30 minutes. All these flavors are drawn into the hot potatoes and then prepare your dressing (whatever it may be). The key with potato or pasta salad is adding things while very hot that give the ingredient flavor on its own.
