1. Ingredients

  1. 46 NILLA Wafers
  2. 6 tablespoons butter or margarine, melted
  3. 1 teaspoon ground nutmeg
  4. 4 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
  5. 1 cup sugar
  6. 3 tablespoons flour
  7. 3 tablespoons rum
  8. 1 cup vanilla
  9. 2 eggs
  10. 1 cup whipping cream
  11. 4 egg yolks

2. Cooking Directions

  1. Preheat oven to 325 degrees F if using a silver springform pan (or 300 degrees F if using a dark nonstick springform pan.) Mix crumbs, butter and nutmeg; press onto bottom and 1-1/2 inches up side of 9-inch springform pan. Bake 10 min.
  2. Beat cream cheese, sugar, flour, rum and vanilla with electric mixer on medium speed until well blended. Add 2 whole eggs, 1 at a time, mixing on low speed after each addition just until blended. Blend in whipping cream and egg yolks; pour into crust.
  3. Bake 1 hour 10 min. to 1 hour 15 min. or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight.

Yield: 16 servings

    I checked the Kraft Foods website and it\'s 1 tsp vanilla, not 1 cup.

    None of us liked this at all, there is entirely too much rum in it for one, and it really does not have all that great of a flavor. The Food Network has a much better version of an eggnog cheesecake.....

    I might try this recipe....after I finish drinking that cup of vanilla, minus the probably one teaspoon that goes into the cheesecake. Can someone please fix this recipe?
