2. Cooking Directions

  1. Preheat oven to 325 degrees F if using a silver springform pan (or 300 degrees F if using a dark nonstick springform pan). Mix crushed cookies and butter; press onto bottom of 9-inch springform pan. Bake 10 minutes.
  2. Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Gently stir in quartered cookies. Pour over crust.
  3. Bake 1 hour or until center is almost set. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Garnish with additional cookies, if desired.

Yield: 16 servings

I have a similar recipe but one big difference is the crust. Rather than having to crush cookies and mix with butter, I just butter the pan (no PAM - you MUST butter it) and lay the cookies on the bottom and up the sides of the springform pan. It works great! The center of the cookie melts down into the cookie part.

    Enjoy!!!

I wanted to make a cheesecake for the first time so I choose this recipe. It is so simple with everyday ingredients. The cake is very rich so a small piece is all you need to satisfy your craving. A word of warnings: I did not have an electric mixer so a had to beat the batter by hand, use a wire wisk and A LOT of arm power.

I took this recipe, swapped some lower fat options, then added up the cals, etc, from this recipe. If you add the ingredients, they don't add to what the recipe says it contains. :( Still, who eats cheesecake to stay in shape lol! But just making a note.

BTW even the lower-fat version I made rocked! So this is a great recipe.
