Flour your chicken before the egg and breadcrumbs.
Add cayenne pepper to the flour for a bit of bite.
Brown some minced garlic in the oil before frying. The garlic penetrates the meat nicely for added flavor.
DONT OVERCOOK THE CHICKEN
Top with provolone instead of mozzorella then add shredded parmesian on top of that for a nice crust.
Add some capers to your sauce for a nice complimenting flavor for the chicken.
Lay all your cutlets in a bed of sauce (a roasting pan works fine).
Bake at 325 for 20 to 30 minutes.
Serve with a warm loaf of scali bread (pepper and garlic oil on the side) and your choice of pasta.
Now go party!!

Use buttermilk in place of the egg, it gives the chicken a wonderful flavor!

This is for the person who is allergic to eggs: try sour cream, slightly stirred up, (i usually mix it with hot sauce) for the egg bath, then do the cheese/breading. The sour cream sticks good to the chicken.

I\'ve never made chicken parmesan but I love to order it when My husband and I go out to eat. I was tired of making the same boring chicken dinners and thought I\'d try this one out. It was easy to make and we both love it. We eat it at least once every two weeks.(we don\'t want to over do it) I took someones advice on another review and put the chicken in flour then the egg and breadcrumb mixture. I also bake the chicken w/the sauce and cheese on it instead of on the stove. Very Yummy!!

Would it be ok to use vegetable oil to cook the chicken instead of using olive oil?

I made this recipe for my husband today and he was very pleased with it. He is a picky eater but I am not surprised that he enjoyed it because I enjoyed it also and I am pretty picky myself. Thank you Kraftfoods for your great recipes.

This is a relatively good CP but to make it taste better -- do the following:
Coat in FLOUR before the eggs and breadcrumbs/cheese.
Fry it in a mix of butter and oil -- really adds to the coating.
Do not add cheese in the pan but add sauce and cheese after frying the chicken and then broil in oven for a few mins. to melt and brown the cheese.
Try Progresso\'s "Italian" breadcrumbs and skip adding the seasoning in this recipe -- you can still mix in parmesan cheese with the breadcrumbs but less necessary if you use Progresso\'s It. I have experimented with many and they make for the best CP.
Good luck!

I make almost the same thing, only I make it half chicken and half zucchini. Basically slice two chicken breast halves into wide strips, and slice about 2-3 zucchini into 1/4 inch wide strips. Then just batter and bread crumb them, fry until golden and continue on with the recipe the same way. It\'s soooo yummy! You can even get little kids to eat it.

This is probably one of my favorite meals. I don\'t fully cook the chicken when I fry it in the pan. I put about an inch of oil in the pan and fry the chicken so the breading cooks. I take the sauce and warm it in a small pot. Once the chicken is brown, I put a little sauce on the chicken, top it with mozzarella and put it in the oven for a few minutes to let the inside of the chicken cook. After that, I turn the broiler and get the cheese nice and brown. I happen to like linguine or thin spaghetti with my chicken parm. As far as sauce goes, I ONLY use Rao\'s Marinara sauce. It tastes like actual homemade marinara sauce. The rest of those jar sauces are pretty much ketchup in a jar.

I say this because i never thought that someone could ruin my favorite food. This recipe was a complete disaster. I nearly blew chunks all over my dinner table. I then immediately headed to the bathroom and forced it through my rear end. I didn\'t want this horrible recipe infecting the rest of my body. DO NOT EAT THIS EVER!
