1. Ingredients

  1. 1/2 cup pecans
  2. 1 1/2 cups all-purpose flour
  3. 1/2 cup yellow cornmeal
  4. 1 tablespoon baking powder
  5. 1/4 teaspoon salt
  6. 1 1/4 cups milk
  7. 1 1/2 sticks unsalted butter, melted
  8. 3 large eggs, separated
  9. 2 large ripe bananas, quartered lengthwise and cut into 1/2-inch pieces
  10. 1/4 cup sugar
  11. maple syrup, for serving

2. Cooking Directions

  1. Preheat the oven to 350 degrees F. Spread the pecans in a pie plate and bake for 10 minutes, or until golden. Let cool, then coarsely chop. Lower the oven temperature to 225 degrees F.
  2. Preheat a waffle iron. In a large bowl, whisk the flour with the cornmeal, baking powder and salt. In a small bowl, combine the milk, melted butter and egg yolks. Stir the liquid into the dry ingredients just until moistened; lumps are okay. Fold the bananas into the batter.
  3. In a clean bowl, beat the egg whites at medium speed until frothy. Increase the speed to high and beat until firm peaks form. Add the sugar and beat until the whites are stiff and glossy. Fold the whites into the batter until no streaks remain.
  4. Oil or butter the waffle iron. Pour 1 1/4 cups of batter into the iron and bake until the waffle is golden, about 6 minutes, depending on the iron. Transfer the waffle to an oven rack to keep warm. Continue to cook the remaining batter in 3 batches. (There should be no need to regrease the iron between waffles.) Separate the waffles and serve with the toasted pecans and maple syrup.

3. Still Hungry?

A lot of butter in the batter makes these waffles extra crisp. As a general rule, adding less butter to a batter results in a fluffier waffle.

    I do not understand why people would write a review about a recipe that THEY do not approve of. Look, if you are looking for a "DIET" recipe, then LOOK for those to review!!! This is a GOOD TASTING recipe.They didn't say it was going to help you on your GOOD BEHAVIOR eating habits! I can't see having waffles on a daily basis, but if I wanted waffles, I would like to eat these, the bananas and pecans give it a wonderful flavor. If you are so worried about the calories and fat then DON'T eat it.BUT,dont run down a recipe just because YOU think it is "bad" for the body!
    I bet you would give a wonderful TASTING Pecan Pie a BAD RATING TOO!!!!!!!!!!!!!!!!

    These are excellent waffles. try making them once. It is only unhealthy if you eat too much. This is true of anything. If you use natural ingredients and eat in moderation these are fine.

    Anything in MODERATION. You can't eat 3 or 4 of these and still think you will stay on your diet. It's like thinking you can eat as much of anything you want because it says DIET on the label.

    when i saw this waffles wow!feel like wanna try them...looks fantastic yummy king!and 4 dorinda what's the problem with you?if you're not interest about this food it's ok but can you please next time wanna say something THINK first.Don't you tell it unhealthy...let say people eat your food and they say it's so horrible!what do you feel??think 'bout another people ok?.....THANKS:-)
