1. Ingredients

  1. 4 tomatoes, seeded and chopped
  2. 1 teaspoon salt
  3. 1 small red onion, cut into thin slices
  4. 10 ounces fresh mozzarella, cut into small cubes
  5. 6 tablespoons chopped fresh basil
  6. 1/4 teaspoon fresh-ground black pepper
  7. 2 (12 inch) store-bought pizza shells, such as Boboli
  8. 1/2 cup grated Parmesan
  9. 2 tablespoons olive oil

2. Cooking Directions

  1. Heat the oven to 450 degrees F. Put the tomatoes in a strainer set over a medium bowl. Toss with the salt and let drain for 15 minutes.
  2. In a medium bowl, combine the drained tomatoes with the onion, mozzarella, basil, and pepper. Top each pizza shell with half of the tomato mixture.
  3. Sprinkle the pizzas with the Parmesan and drizzle with the oil. Bake directly on the oven rack until the cheese just melts, about 8 minutes.

Yield: 4 servings

3. Still Hungry?

Use the best tomatoes you can find for this seasonal pizza. To avoid a soggy crust, we recommend salting and draining the tomatoes to get rid of some of their juice.

Notes:

Grilled Pizza: The summer ingredients on this pizza make it a perfect candidate for grilling. Brush a tablespoon of oil on the top of the pizza shells and set them, oiled-side down, on the grill. Cook until warm, about three minutes. Brush with another tablespoon of oil, flip the shells, and top with the remaining ingredients. Cook until the cheese just melts, about ten minutes.

    This was a hit with my husband and daughter. And folks, could we please lighten up on the criticism of every recipe that isn't low fat? Reducing the fat content of a recipe is relatively easy -- I do it all the time; however, I don't feel the need to rant every time a featured recipe isn't geared to my eating habits.

    According to the recipe it makes four servings. That's a half a 12 inch pizza each, which would yield about 3 slices a side or 312 calories a slice. If you want to reduce the calories more use low fat cheese.

    If you are worried about the calorie or fat content, change the ingredients to low-fat or low-cal. Don't insult the recipie because of that. A bit of alteration and it will work for you. Like the one said before me there, low fat cheese, I am very sure that that would help at least a little bit! I have not yet tried this recipie, but I am very tired of seeing "Way too many calories!" so I am leaving this message. Be smart people, use that brain that I am pretty sure you have.

    This Pizza was delicious! I would definitely make it again. There's only one bad thing about it- it has alomost 1000 calories! Not that great for our dieters out there. So, I suggest making this rarely as a treat.

    The pizza was great. Most of the calories are olive oil and that's the healthy good fat.
