1. Ingredients

  1. 4 pounds chicken wings
  2. 3 tablespoons cooking oil
  3. 4 cloves garlic, chopped
  4. 1 3/4 teaspoons salt
  5. 1 1/2 teaspoons cayenne
  6. 2/3 cup mayonnaise
  7. 1/3 cup sour cream
  8. 1/4 pound blue cheese, crumbled
  9. 2 scallions including green tops, chopped
  10. 5 teaspoons vinegar
  11. 1/4 teaspoon fresh-ground black pepper
  12. 1/4 cup ketchup
  13. 1 tablespoon Tabasco sauce
  14. 8 ribs celery, cut into sticks

2. Cooking Directions

  1. Heat the oven to 425 degrees F. In a large bowl, combine the wings, oil, garlic, 1 1/2 teaspoons of the salt, and the cayenne. Arrange the wings in a single layer on two large baking sheets. Bake until just done, about 25 minutes.
  2. Meanwhile, in a medium glass or stainless-steel bowl, combine the mayonnaise, sour cream, blue cheese, scallions, 1 teaspoon of the vinegar, the remaining 1/4 teaspoon salt, and the black pepper.
  3. In a large bowl, combine the ketchup, the remaining 4 teaspoons vinegar, and the Tabasco sauce. Add the wings and toss to coat. Serve the wings with the celery sticks and blue-cheese dressing alongside.

Yield: 4 servings

3. Still Hungry?

Most of us think of Buffalo wings as bar food, but with their accompaniment of celery sticks and creamy blue-cheese dressing, they make a fine casual meal. These wings are hot, but if you like them incendiary, pass extra Tabasco sauce at the table.

Notes:

Menu Suggestions: Pair these wings with more finger food. Corn on the cob would go nicely. Roasted potato wedges are a good alternative and can be cooked alongside the wings.

    Not sure on the exact measurements, but just make them to taste. In a skillet or pan mix the following ingredients:

    4 tablespoons of butter
    12 tablespoons of Franks(can be purchased at grocery stores)
    4-5 tablespoons of tobasco
    1 capful of vinegar

    place ingredients in a pan and bring to a simmer for a few minutes . You can taste test to see if you need to add ingredients. Be carefeul, it will be hot(fire hot also)

    We deep fry our wings then put them in a tupperware container, with the hot wing sauce, then cover with a lid. We then shake the tupperware container getting the sauce on the wings. When you open the lid, be careful as the steam from the wings will cause air build up in the container.

    Mix 1 cup melted butter with 1 cup Franks red hot sauce. Deep fry wings, without tips. DO NOT BAKE! Toss wings fresh out of the fryer with sauce. Serve with celery, blue cheese and a tall glass of beer! This is the ONLYacceptable way to make Buffalo wings. And by the way, no one said they were healthy- but in Buffalo we have a thing called exercise... especially when you have to dig your way out of several feet of snow!

    See Buffolonian for the correct Buffalo Wings recipe. The wings should ALWAYS be fried to be authentic. Anything else is just a variation, but will not yeild the proper taste. Someone at Food and Wine had way too much time on their hands and thought they could make something better.......They didn't!
