1. Ingredients

  1. 3/4 cup pine nuts
  2. 10 drained oil-packed sun-dried tomatoes
  3. 5 drained oil-packed sun-dried tomatoes, chopped
  4. 1/2 cup olive oil
  5. 1/3 cup water
  6. 1 1/4 teaspoons salt
  7. 1/2 teaspoon fresh-ground black pepper
  8. 1 pound fusilli
  9. 1/4 pound spinach leaves, shredded
  10. 1 cup halved cherry tomatoes
  11. 1/4 cup grated Parmesan

2. Cooking Directions

  1. In a small frying pan, toast the pine nuts over moderately low heat, stirring frequently, until golden brown, about 5 minutes; remove from the pan. Or toast the pine nuts in a 350 degrees F oven for 5 to 10 minutes.
  2. In a blender or food processor, put 1/4 cup of the pine nuts, the whole sun-dried tomatoes, the oil, water, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Puree until smooth.
  3. Meanwhile, in a large pot of boiling, salted water, cook the fusilli until just done, about 13 minutes. Drain. Rinse with cold water and drain thoroughly.
  4. In a large glass or stainless-steel bowl, toss the pasta with the remaining 1/2 cup toasted pine nuts, 3/4 teaspoon salt, and 1/4 teaspoon pepper, the pesto, the chopped sun-dried tomatoes, the spinach, cherry tomatoes, and Parmesan.

Yield: 4 servings

Variations

Use chopped walnuts instead of pine nuts. Add half a cup of roughly chopped pitted black olives to the salad.

Wine

There are seven different subzones within the Chianti growing area, among them the famed Classico. The best choice for this pasta, however, would be a Chianti from Rufina, where the wines are crisper, with more vibrant fruitiness.

    Great tasty recipe. Pine nuts really add to the flavor. A similar dish with feta instead of the sun dried pesto is also something good to try.

    Just want to comment on people's negative reviews on this site. Give all of us a break. If you haven't tried it or don't plan to, you don't know how it is and shouldn't be writing a review. Of course if you have tried it and don't like it please let us all know.

    And in response to the last post...regardless of the calories it is a healthy meal. How can you rate this poorly when you haven't tried it and you don't know the difference between healthy and non healthy foods. The calorie count alone does not make a meal unhealthy. There is nothing in this that is bad for you. Remeber that nuts are very high in calories and fat; however very good for you.

    i think this recipe is awesome i've made it a couple times once for my family and more for my church and they all loved it then sometimes i made it for my friends at school...
    however since pine nuts can sometime be really expensive i try raisins....regular sun-dried raisins...not the golden ones - but i found the raisins really add a taste of sweetness and no one really could tell the difference plus in the end, we had a lot of pine nuts left over in the dish and nothin to eat 'em with...and with the raisins, all was left was the dish itself lol....the raisins are a nice alternative i think

    just use the same amount as u would nuts but instead of toasting, just throw 'em in as is

    So tasty! If you want to reduce the calories, substituting walnuts for pine nuts will make a big difference. I also replaced spinach with kale and it was still fabulous.

    this is an easy recipe and my whole family loved it. They said the pasta is like cheesecake factory pasta. We make it everytime we feel like having pasta.
