Benno uses store-bought puff pastry and an uncomplicated caramel to make this sublime and surprisingly fast dessert. It reminds him of the homey cobblers his grandmother used to make, but with the refinement of a classic French apple tarte Tatin. 'This whole menu is all about what I love to eat in the middle of the summer,' Benno says. 'I'd sit down to this meal any day in August.'
I enjoyed making this, even though I am a bit of a klutz in the kitchen... I always seem to end up with something sticky in my hair. Anyway, I liked the way it turned out, but I decided to add some white chocolate shavings (in deference to my friends who LOVE white chocolate) and a few mint leave just for presentation. It was a big hit! I served it up in these cute hand-painted brandy glasses I found at a craft fair.
