Apples baked in flaky pastry with cinnamon sugar are irresistible, especially when served with vanilla ice cream. To save preparation time, we use frozen puff-pastry sheets.
Besides the pain of thawing and rolling out the puff pastry, this recipe's a cinch! I used a melon baller to core the apples (after cutting in an outline with a paring knife), which seemed to work pretty well.
I would sprinkle some of the cinnamon/sugar mix on the outside of the apple next time - just to even out the flavor.
