    I tried this last night for dinner and it was a hit. Everybody loved it.

    I like this tried and true winner- but I use egg substitue and heavy whipping cream in place of the real eggs. I also make it without the red wine, but I think it adds a nice change to the recipe if it is something you make often. I like to take the bacon out of the grease before I add anything else to the pan so it is crispy when I toss it with the pasta.

    I also use heavy cream in place of any eggs which i think I omit alltogether. I also add leftover chicken breast if I have any in fridge and drain the grease quiet well. One of my favorite dishes though. Great flavor.

    Linguene Carbonara is just like Spaghetti alla Carbonara, I learned that in the Hotel School In Italy.

    Put the bacon after cutting in the pan and fry it with some butter, mix the pasta ( Linguene ) with the bacon and melted fat and butter while still on low heat ,then dip and mix the cream and the parmizan and the yolk of egg which you have prepared togather add grownded black pepper. Bon Appetito

    Another Version:

    Don't use wine in this dish.
    Reduce garlic to little or none.
    Cook bacon by itself until crisp, crumble and set aside.

    While linguine is cooking, mix the following in bottom of
    large serving bowl:
    2 whole eggs and one egg yolk
    1/2 cup half 'n half
    salt

    I made this for my husband and he couldn't get enough of it. It was very easy to make and did cost alot. You must eat hot, because when it gets cold all you can taste is bacon grease.

    easy to fix however I would replace the bacon with italian prochuto sweet ham sliced small. A little goes a long way. The bacon make the recipe a little too thick and fatty.
    However that being said, It really was a pretty good recipe.

  • Way to Greasy....

    I made this for a dinner party and followed the directions to a T, but I drained the grease and lets just say everyone kept complaining about all the fat and grease even though i had virtually drained all of the grease out of the pan! This was a Big Embarrassment! Left overs were horrible the linguine was hard and greasy and the bacon was soggy and this dish only had a bacon grease flavor the second time around...I am a pretty good chef but i know when i have made a bad dinner choice and this was the worst choice and the most expensive meal to just throw in the garbage! Not Kid Friendly Either... My kids were sick to there stomaches all night because of the grease! All I can say is if you try this be sure to make it for yourself the first time around before you serve it to anyone you know! Also make sure you can have this much Fat,Grease,Sodium and Carbs before you try it or you may just block an artery!

    I cant beleive how easy and good this was. I must atmit I was scared about eating raw eggs but it was amazing. My husband loved it. Next best thing to Olive Garden.

    I love the receipes you offer, I send them to all my friends.
    I do have a heart condtion that requires low or no salt.
    Could you please offer the sodium amounts in your receipes.

    Also low salt recipes would be helpful!!!

    I would love to eat alot of what I email to other people!!!
