I was so excited to make this soup and it definately lived up to my expectations. It was fast and easy and used ingredients that I usually have already.
I am not one to follow recipes strictly so this was no exception.
I added some diced red potatoes and a tablespoon or so of sugar.
I also only added about half of the water it called for because I wanted it more stew-like.
The apples were a delicious addition!
My kids loved it and I will definately make it again!

Haven't made the soup yet, but rated it based on the potential.I read this recipe, with excitment, thinking that it would be perfect for a party I'm having later this month. Then I got to the calorie count which, as was mentioned in the previous post, really confused me! Seems awfully high. Wonder how to check it?

I love that it's such a quick, simple recipe to make, but I did mess around with it a bit. The original recipe seemed to be too sweet, with not enough in it to match the heartiness of the pumpkin.
I switched out the ham for chorizo- a spicy mexican sausage that I pulled out of it's casing to fry before tossing in. I switched the wine for a full bottle of honey porter (Sam Adams) for stronger flavor. To balance the spicy sausage, I also put in about 1/2 cup of apple cider (reduce water accordingly), and a can of no-salt corn.
It came out incredible, and I would highly recommend it. The only question I had on the recipe was how it came out to 656 calories per serving- the pumpkin, broth, and veggies are very low cal. The sausage would get you there, if you ate the whole 2 pounds, but per cup wouldn't be so much. So where do the high calories come from?

Has anybody else noticed the extremely high calorie count I dont think that could be right ?

I loved this recipe! I have a creamy pumkin soup recipe that is a favorite of mine, and was so excited to find a broth based one! I cut back on the water a little and added more wine and broth...also, there's a lot of ham--i cut back a bit on the pig and added more apple, celery, and carrot. I can see how potatos would be a nice addition too since it's very stew like. perhaps sweet potatoes? Also, I suspect the fat g. and fiber g. were mixed up since Pumpkin is a great source of fiber (go super foods!) which is what is making the calorie content so high...also, this definately makes more than 4 servings unless you're having Paul Bunyan's family over for dinner.
