1. Ingredients

  1. 1 1/2 pounds ground turkey
  2. 1/4 cup dry bread crumbs
  3. 1/4 cup grated Parmesan cheese
  4. 1/4 cup chopped fresh parsley
  5. 2 scallions, including green tops, chopped
  6. Salt
  7. 1/4 teaspoon fresh-ground black pepper
  8. 2 tablespoons milk
  9. 1 egg, beaten to mix
  10. 2 tablespoons cooking oil
  11. 1/4 pound provolone cheese, sliced
  12. 1/2 cup mayonnaise
  13. 3 tablespoons pesto, store-bought or homemade
  14. 1 10-inch round or 8-by-10-inch rectangle of focaccia
  15. 1/2 pound tomatoes, sliced

2. Cooking Directions

  1. In a medium bowl, combine the ground turkey, bread crumbs, Parmesan cheese, parsley, scallions, 3/4 teaspoon salt, the pepper, milk, and egg. Form the mixture into four patties, each about 1-inch thick.
  2. In a large nonstick frying pan, heat the oil over moderate heat. Add the turkey burgers and cook for 5 minutes. Turn and then top each burger with the provolone cheese. Cook until just done, about 6 minutes longer.
  3. Meanwhile, in a small bowl, combine the mayonnaise and the pesto. Cut the focaccia into quarters. Cut each piece in half horizontally. Spread the cut surfaces of each piece with the pesto mayonnaise.
  4. Top the bottoms of the focaccia with the turkey burgers and then the tomato slices. Sprinkle the tomato with a pinch of salt. Cover with the top piece of focaccia.

Yield: 4 servings

3. Still Hungry?

The focaccia adds to the Italian flavor of these juicy burgers. However, bread selections are endless - toasted country bread, onion rolls, or whatever you like.

Notes:

Menu Suggestion: Burgers go best with other finger food--oven-roasted potato wedges and raw carrot or fennel sticks, for example.

    YIKES! 1106 calories PER BURGER? What, did you skip lunch? That's two thirds of the dieting woman's daily intake (and let's face it, how many women are there in America who aren't dieting?). Try making six patties. . .or use just a pound of turkey (which should be more than plenty for four people).

    I have to agree the calorie content is SO high!! I can only eat turkey meat and so I know many ways in which to make it...NONE of which are THIS high in CALORIES! It's all in what you put on it or in it. Also, when making burgers...try using grilled sourdough...it makes a nice patty melt.

    The nutritional information is definitely for one burger. There's no way that only one burger can have under 300 calories when there is so much mayonaise, cheese, and egg in the recipe!

    The recipe still looks good, though I would drastically reduce or eliminate the mayo since I don't even like mayo to start with and it's all fat and calories! I am fine with eating cheese since it provides much-needed calcium, though you can always substitute a low-fat cheese if you are concerned with calories. Also using 1lb of meat for 4 burgers would be an easy way to reduce some of the fat and calories.

    Sure it's an easy dinner to make, that's why it's featured, but over 1,000 calories? That's a pretty ridiculous splurge for one meal. And that's not including the recommended potato wedges! I guess you could remove the cheese and substitute the pesto mayo and bread with other choices, but that's not the same recipe. I'll think I'll pass on your Thursday.

    65 grams of fat? I guess if you eat once a day then you'll be set, but that is a whole days worth of Grams of Fat. i think the person who made this recipe was seeking to clog our artieries.
