2. Cooking Directions

  1. In a small bowl, whisk together the sour cream, 1/4 cup of the mayonnaise, and the horseradish.
  2. In a large bowl, combine the crabmeat, the remaining 1/4 cup mayonnaise, 1/4 cup of the bread crumbs, the scallions, parsley, cayenne, salt, and pepper. Shape the crab mixture into eight patties. Coat the patties with the remaining 3/4 cup bread crumbs and pat off the excess.
  3. In a large nonstick frying pan, heat the oil over moderate heat. Working in batches if necessary, fry the cakes until golden brown and crisp, about 2 minutes. Turn and fry until golden brown on the other side, about 2 minutes longer. Drain on paper towels. Serve with the horseradish cream.

Yield: 4 servings

Notes:

Fish Alternatives

There's really no substitute for sweet fresh crabmeat--but for a completely different taste, you could use one pound of cod, cooked and flaked.

Wine

A full-bodied white such as a chardonnay from California will be delightful with the crab. Try to find one that isn't too oaky--just full of the taste of ripe fruit.

  • OM Lord... I never knew it could be so good.

Ok.... 1 I dont like horseradish! 2 I dont have scallions! 3 I dont have sour cream! 4 I dont have any parsley! But the picture just looked so good I had to do something with all this crabmeat I have in the refrigerator.

I dont have to use the cream sause. Husband will like it because it has horseradish in it and we never use it. I do have a red union and i can chop that up pretty fine. No sour cream but i do have yogurt. I have some dried celery flakes. The parsley is just for color anyway right.
It is OFFICIAL, I LOVE CRAB CAKES AND HORSERADISH SAUCE. I had to do a little substituting and made 8 1/4 crab cakes so I went ahead and cooked the smallest one and even tried the sauce. 1 bite without and then 1 bit with... WOWOWOWOWOWO yummy all the flavors mixing in my mouth.. I cant wait for dinner tonight heheheehe
