  1. 2 cloves garlic, minced
  2. 1 teaspoon grapefruit zest
  3. 1/2 cup grapefruit juice
  4. 1 tablespoon cooking oil
  5. 2 tablespoons honey
  6. 1/2 teaspoon salt
  7. 1/4 teaspoon fresh-ground black pepper
  8. 4 bone-in chicken breasts

2. Cooking Directions

  1. Light the grill. In a small bowl, combine the garlic, grapefruit zest, grapefruit juice, oil, honey, salt, and pepper.
  2. Grill the chicken breasts over moderately high heat, brushing frequently with the glaze, for 8 minutes. Turn and cook, brushing with more glaze, until the chicken is just done, 10 to 12 minutes longer. Remove.
  3. In a small stainless-steel saucepan, bring the remaining glaze to a boil. Boil for about 1 minute, remove from the heat, and pour over the grilled chicken.

Yield: 4 servings

Simply prepared yet special, these chicken breasts are grilled and basted with a bitter, tart, and sweet glaze.

Notes:

Menu Suggestion: Since the chicken breasts don't have a lot of sauce, serve a juicy vegetable such as grilled or sauteed summer squash or zucchini alongside. Variation: Grilled Chicken Breasts with Citrus Glaze: Use a combination of citrus juices, such as orange, lemon, or lime, instead of all or part of the grapefruit juice.

    Grapefruit and chicken are a great mix....fresh vs bland. I think I used too much grapefruit juice, as I had a hard time getting the finished sauce to thicken up enough. Maybe a little more honey, or corn starch? Probably "Pilot Error" on my part. Either way, the basting alone with the sauce produced a fantastic meal! Chicken had a beautiful and flavorful char and was well received by all. The garlic, honey and grapefruit combine well (cayenne was also a late entry) All in all a very fresh, simple and fool proof recipe. I'll make it again several times this summer. BTW, one grapefriut should provide you with the 1/4 cup of juice. 8 out of 10. Great, quick summer meal. Glaze can be made in 5 minutes. No need to marinate, just glaze and blaze. God, that was cheesy. If you are looking for a nice diversion from heavily salted and oily marinades try this. It's on my short list
