1. Ingredients

  1. 4 large rosemary sprigs
  2. 4 large thyme sprigs
  3. 4 (12 ounce) skinless chicken breast halves, on the bone
  4. 1/2 teaspoon crushed red pepper
  5. Salt and freshly ground black pepper
  6. 2 tablespoons extra-virgin olive oil
  7. 1/2 cup chicken stock or low-sodium broth
  8. 1 teaspoon all-purpose flour mixed with
  9. 2 teaspoons water

2. Cooking Directions

  1. Preheat the oven to 375 degrees F. Press a rosemary and thyme sprig on each chicken breast. Sprinkle the chicken with the crushed red pepper and season with salt and black pepper.
  2. In a large nonstick, ovenproof skillet, heat the olive oil until shimmering. Add the chicken breasts, herb side down, and cook over moderately high heat until lightly browned, about 5 minutes. Season the chicken with salt and black pepper, turn and cook until lightly browned, 2 to 3 minutes longer. Transfer the skillet to the oven and roast the chicken for 20 minutes, or until the juices run clear when the breast is pierced near the wing joint.
  3. Transfer the chicken breasts from the skillet to a platter, cover and keep warm. Pour off any fat in the skillet and set the skillet over a burner. Add the chicken stock and cook over high heat, scraping up any bits stuck to the bottom of the pan. Whisk the flour and water mixture into the skillet and boil until slightly thickened, about 1 minute. Pour the pan sauce into a bowl and serve with the chicken.

    to write a review based on a meal you haven't even attempted to make. who does that?

    it was good, although i think (in defense of my rating) i was in the mood for something a bit less basic as far as taste is concerned.

    a good side- the sweet potato black bean salad recipe on this site- bake the potato, half it, spoon a well into it, fill with black beans, top with sour cream. SO good :)

    My family loved the taste, and I loved making it because not too many ingredients were needed and the cooking steps were simple. It's also fancy enough to serve when you have guests.

    Very tasty, but I would suggest at least doubling the ingredients used to make the gravy in the pan at the end, as the amounts listed in the recipe hardly made enough in my opinion.

    well i actually havent tried it yet, but it sounds yummy. i think i'll try it tomorrow but, i might add mushrooms to the rescipe, maybe a couple carrots too. i'll let you know how it taste.
