It's impossible to go wrong with layers of graham, chocolate, and marshmallow. Broiling the gooey top creates an irresistible golden crown that crackles each time the pie is sliced.
Cooks' notes
To take the temperature of a shallow amount of syrup, put bulb in saucepan and turn thermometer facedown, resting other end against rim of saucepan. Check temperature frequently.
Pie (before browning topping) can be chilled up to 1 day.
Special Equipment
a candy thermometer
I mean I loved the pie, but I used the marshmallow fluff in the jars and it worked just fine without all the water, corn syrup, gelatin, thermometer yada yada. So for us working folks its great making the chocolate cream because pudding doesn\\'t work here but no need for the homemade marshmallow topping.

its 8 * 462 calories. Its actually average for a pie (that doesn\\'t attempt to be diety) A store bought pie is around the same, and 8th is a pretty big slice. just eat a 16th at a time
