  1. 1/4 cup unsalted butter
  2. 1 large sweet apple such as Gala or Golden Delicious, peeled, cored, and cut into 1/4-inch-wide wedges
  3. 1/2 cup whole milk
  4. 1/2 cup all-purpose flour
  5. 4 large eggs
  6. 3 tablespoons granulated sugar
  7. 1/2 teaspoon vanilla
  8. 1/4 teaspoon salt
  9. Confectioners' sugar for dusting

Cooking Directions

  1. Put oven rack in middle position and preheat oven to 450 degrees F.
  2. Melt butter in skillet over moderate heat, then transfer 2 tablespoons to a blender. Add apple wedges to skillet and cook, turning over once, until beginning to soften, 3 to 5 minutes.
  3. While apple is cooking, add milk, flour, eggs, granulated sugar, vanilla, and salt to butter in blender and blend until smooth.
  4. Pour batter over apple and transfer skillet to oven. Bake until pancake is puffed and golden, about 15 minutes. Dust with confectioners sugar and serve immediately.

Yield: 2 servings

    My family loved this! Took about 20 minutes to make. I used my food processor to mix ingredients while apple slices cooked. Pancake came out big, fluffy, and light! Looked even better than the picture. We split it up between the 4 of us and the kids didn't even know they'd eaten an egg! Next time I'll add an extra apple. Scrumpcious!

    So easy to make, fun to watch (it puffs up real high), and a crowd pleaser with the kids.

    It reminds me of a German apple crepe -- so good!

    My grandkids and I say Emeral on Good Morning America one snow day making this recipe. We got up and made it and whow!! We all loved it. We had many snow days last winter and tried diffferent pancakes each time. This is on the top 3 list. Can't wait for this winter!!
