  1. 1/4 cup fresh lime juice
  2. 1 teaspoon salt
  3. 1 teaspoon sugar
  4. Freshly ground black pepper to taste
  5. 1/2 cup extra-virgin olive oil
  6. 4 pounds large vine-ripened tomatoes
  7. 1 cup packed flat-leaf parsley leaves
  8. 1 cup packed coriander leaves
  9. 1/2 cup thinly sliced fresh mint leaves
  10. 1/2 cup thinly sliced scallions

2. Cooking Directions

  1. Make vinaigrette: In a small bowl whisk together lime juice, salt, sugar, and pepper and add oil in a stream, whisking.
  2. Cut tomatoes into 1/2-inch-thick slices and arrange decoratively on a platter. Drizzle tomatoes with about two thirds vinaigrette.
  3. In a bowl combine herbs and scallions and toss with remaining vinaigrette.
  4. Mound herb mixture on top of tomato slices.

Yield: 16 servings

    I have been making this for years, and it is one of my favorites. A great alternative to heavy potato salads and and mayo loaded Waldorf salads. This also tastes great with fresh mozzarella (the type that comes packed in water) and for a delicious spicy taste, try buffalo mozzarella.
