  2. 1/4 cup sugar
  3. 1/2 teaspoon salt
  4. 1 teaspoon finely grated peeled fresh ginger
  5. 1/4 teaspoon cayenne pepper
  6. 2 pounds butternut squash, peeled, seeded, and coarsely shredded
  7. 1 bunch scallions, finely chopped

  1. Stir together vinegar, sugar, and salt in a large bowl until sugar and salt are dissolved, then add remaining ingredients and toss well. Chill relish, covered, tossing occasionally, at least 2 hours (to allow flavors to develop) and up to 2 days.
