  1. 2 pounds green asparagus
  2. 1 large onion, chopped
  3. 3 tablespoons unsalted butter
  4. 6 cups chicken broth
  5. 1/2 cup creme fraiche or heavy cream
  6. 1/4 cup fresh lemon juice, or to taste

2. Cooking Directions

  1. Cut tips from 12 asparagus.
  2. 1 1/2 inches from top and halve tips lengthwise if thick. Reserve for garnish.
  3. Cut stalks and all remaining asparagus into 1/2-inch pieces.
  4. Cook onion in 2 tablespoons butter in a 4-quart heavy pot over moderately low heat, stirring, until softened. Add asparagus pieces and salt and pepper to taste, then cook, stirring, 5 minutes. Add 5 cups broth and simmer, covered, until asparagus is very tender, 15 to 20 minutes.
  5. While soup simmers, cook reserved asparagus tips in boiling salted water until just tender, 3 to 4 minutes, then drain.
  6. Puree soup in batches in a blender until smooth, transferring to a bowl (use caution when blending hot liquids), and return to pan. Stir in creme fraiche, then add more broth to thin soup to desired consistency. Season with salt and pepper. Bring soup to a boil and whisk in remaining tablespoon butter.
  7. Add lemon juice and garnish with asparagus tips.

Yield: 4 servings

Soup keeps, covered and chilled, 2 days. If making ahead, add last tablespoon butter and lemon juice after reheating.

    Everyone must try this excellent and elegant soup. You could even serve it to the Queen!

    It is creamy and the colour is lovely. My husband especially liked it, and he doesn\'t usually care for asparagus!

    I have made this soup. It is awesome. If you use an immersion blender this soup is smooth and you don\'t need any cream. It tastes creamy enough. But you must add the lemon juice; It raises the taste to sublime.
    One hint worth using: Simmer the discard asparagus ends in the chicken broth for 30-45 minutes. This makes the broth richly asparagusy in taste.
    I also added a one pound bag of frozen asparagus at the end -- this added more flavor and green color.
    Others have used the same recipe but substituted broccoli, carrots, even mushrooms and report wonderful results.
