1. Ingredients

  1. 1 large shallot, finely chopped
  2. 2 tablespoons olive oil
  3. 1/2 teaspoon salt
  4. 1/4 teaspoon black pepper
  5. 1 1/2 pounds ground turkey (not labeled 'all breast meat')
  6. 5 ounces extra-sharp Cheddar, cut into 1/2-inch-thick slices
  7. 4 hamburger or kaiser rolls
  8. 1/4 cup oil-packed sun-dried tomatoes, drained
  9. 1 tablespoon water
  10. 2 teaspoons cider vinegar
  11. 1/4 teaspoon salt
  12. 1/4 cup mayonnaise
  13. Lettuce leaves

2. Cooking Directions

  1. Make burgers: Put oven rack in middle position and preheat oven to 350 degrees F.
  2. Cook shallot in oil with salt and pepper in an 8-inch skillet over moderate heat, stirring occasionally, until golden, 2 to 3 minutes, then transfer to a bowl. Add turkey and mix gently but thoroughly.
  3. Turn out turkey mixture onto a sheet of wax paper and divide into 8 equal mounds. Pat 1 mound into a 4-inch patty and top with 1 piece of cheese, then put a second mound on top, patting it onto other patty to enclose cheese. Pinch edges together to seal and shape into a single patty. Make 3 more burgers in same manner.
  4. Heat an oiled well-seasoned ridged grill pan over moderately high heat until hot but not smoking, then grill burgers, turning over once, until just cooked through (no longer pink), 8 to 9 minutes total.
  5. While burgers are cooking, heat rolls on a baking sheet in oven until crusty, about 5 minutes. Transfer rolls to a rack to cool slightly.
  6. Make mayonnaise and assemble burgers: Puree tomatoes with water, vinegar, and salt in a blender or mini food processor, scraping down sides as necessary, then blend in mayonnaise.
  7. Cut rolls in half horizontally (if necessary) and spread cut sides with tomato mayonnaise. Serve burgers on rolls with lettuce.

    Instead of us complaining about the fat burger - think of ways to slim it down - such as using 2% cheddar cheese, sundried tomatoes and rehydrate in warm water instead of oil packed sundried tomatoes, light mayonaise instead of regular mayonaise, instead of regular buns - use either lettuce wraps or whole grain wrap. Add onions and garlic and other vegetables sauteed in a little low fat chicken broth or water.We can eat most foods, just use common sense and rethink it.

    "Aren\'t there some ingredients you can substitute to lower the calories and fat grams? This is outrageous."

    This isn\'t a recipe by Eating Light. Get that through your head first. Epicurious doesn\'t pander to people looking to cut fat out of their diet. And if you ARE trying to cut fat out of your diet, try exercising the muscle between your ears, or at least move your eyes over the recipe a few times to make REALLY BASIC DECISIONS. For example:

    -1/4 cup of mayonnaise? Try light or fat free mayonnaise, there\'s a good amount of fat in 1/4 cup of mayo
    -2tbsp. of olive oil? Try using a regular pan instead of a grill-pan, and spray it with olive oil cooking spray
    -5oz. of cheese for 4 burgers? Cut that amount in half, or substitute reduced fat cheddar.

    It pains me to see people who are so quick to boast that they\'re on a diet, but then expect every recipe to cater to their needs. It also pains me to see people "on a diet" that can\'t make basic health-conscious decisions in recipes.

    Have you noticed how americans have gone turkey mad?Its ridiculous.The problem with any "turkey burger "recipe is that no matter how you dress it up,once you hit the turkey,its just not a burger.I suggest just eating a lean ground beef burger every once in a while,rather than trying to convince yourself that Turkey burgers are tasty.,Ive cooked them every which way,and i would rather wait and enjoy a real burger once in while.Substituting chicken breast is also a much tastier option.
