Even though I\'m likely to swap out all the cheese for lower fat varieties to make the dish a little \'healthier\', which will definitely cut down the calories, I personally don\'t think the 700 or so calories it\'s boasting is that much, given that this is pretty much an entire meal within itself. If it\'s not enough, add a small salad of spring greens tossed in basalmic vinegar. Will add to the meal and still barely add any calories. I think the recipe looks wonderful!

I am always looking for a fun and easy mix up for a family favorite. After reading through the recipe, 700 calories does seem a little much. Easy fix is by switching some of the higher calorie ingredients that taste just as great. I switched the listed Ricotta cheese with Skim Ricotta, as for the cheeses in the filling again change to part skim Mozzarella. For those busy moms that don\'t have time to stew the tomatoes for a puree, you can buy the canned purée that tastes just as fresh.

(whistles through teeth) 700 calories? Seriously? Why not eat fast food and skip all the effort spent cooking - it\'s the same in the end.
Any-who. As a vegan, I cannot eat all the dairy and believe it or not, I\'m not a huge fan of eggplant. I find this much simpler: use pasta sauce and add to it whatever you\'d like: sauteed mushrooms, onions, green peppers, garlic, veggie ground beef (or real beef), etc. Heat the sauce on low heat as you fix the noodles. Drain the noodles and let them sit in cold water (to prevent further cooking). Drain one noodle at a time, add the filling and roll as normal. Pour some of the leftover sauce on top and bake. SO simple - few ingredients and little prep time.

1.5 hours????!!!!! 700 calories????!!!!!!!!! You might as well go to a fast food restaunt and eat there rather than making and eating this dish!!!!!!! Eating at a fast food resraunt wil save you time and money!!!!
