1. Ingredients

  1. 3/4 cup fresh lemon juice
  2. 3/4 cup dry white wine
  3. 6 tablespoons olive oil
  4. 4 1/2 tablespoons California chili powder
  5. 9 garlic cloves, chopped
  6. 3 shallots, chopped
  7. 2 tablespoons soy sauce
  8. 2 tablespoons honey
  9. 1 1/2 tablespoons fresh oregano leaves
  10. 8 boneless chicken breast halves with skin
  11. Oregano sprigs (optional)

2. Cooking Directions

  1. Puree first 9 ingredients in blender until smooth. Using meat mallet, pound chicken breasts between sheets of plastic wrap to 1/2-inch thickness. Place chicken in 13x9x2-inch glass baking dish. Pour marinade over and turn to coat. Cover and refrigerate overnight.
  2. Prepare barbecue (medium-high heat) or preheat broiler. Drain marinade into small saucepan. Boil 5 minutes. Season chicken with salt and pepper.
  3. Grill or broil chicken until cooked through, about 5 minutes per side. Brush some marinade over chicken. Transfer to platter. Garnish with oregano sprigs, if desired. Serve with remaining marinade.

Yield: 8 servings

3. Still Hungry?

To round out the meal, present warm pita bread and a mixed green salad with the chicken. A chilled Marsanne or Chardonnay is nice alongside.

    in respnse to the comment before: while i don\'t think reusing marinade is good, i think this recipe makes it safe by boiling the marinade first, then serving. just fyi !

    If you READ the recipe completely, you will note that you BOIL the marinade. Boiling the marinade effectively cooks the uncooked fluid drained from the chicken.

    There is nothing unsafe about this recipe. Read it carefully and follow the directions completely.

    Did any of you think just to reserve some of the marinade before putting it on the chicken . So you can brush the chicken at the end with the reserved marinade?????

    That is why you cook the marinade before you use it. It is perfectly fine to use as long as you bring it to a rolling boil to kill any bacteria from the raw chicken.
