1. Ingredients

  1. 4 ounces 90%-lean ground beef or 93%-lean ground turkey
  2. 1 cup cooked brown rice
  3. 4 large ripe but firm tomatoes (about 8 ounces each)
  4. 1/2 teaspoon kosher salt, divided
  5. Freshly ground pepper to taste
  6. 1/2 cup petite green peas (cooked, if fresh; thawed, but not cooked, if frozen)
  7. 1/4 cup minced red onion
  8. 1/2 cup grated Parmigiano-Reggiano cheese, divided
  9. 1 tablespoon minced flat-leaf parsley
  10. 1 cup breadcrumbs made from day-old whole-wheat bread (see Tip)
  11. 2 tablespoons extra-virgin olive oil
  12. 1 small clove garlic, minced

2. Cooking Directions

  1. Preheat oven to 350 degrees F. Coat an 8-inch-square baking dish with cooking spray.
  2. Cook ground beef or turkey in a small skillet over medium-high heat, crumbling with a spoon, until brown and cooked through, 1 to 2 minutes. Transfer to a large bowl.
  3. Add cooked rice to the bowl with the meat.
  4. Meanwhile, slice enough off the top of each tomato to remove the core (1/2 to 1 inch). Scoop out the tomato pulp using a teaspoon or melon baller. Finely chop 1/2 cup of the pulp and add to the bowl with the rice and meat. (Reserve the remaining pulp for another use; see Kitchen Tips.) Season the inside of the tomatoes with 1/4 teaspoon salt and pepper.
  5. Add peas, onion, 1/4 cup cheese, parsley, the remaining 1/4 teaspoon salt and pepper to the rice mixture. Stir to combine. Divide the mixture evenly among the tomatoes and place the tomatoes in the prepared baking dish. Combine the remaining 1/4 cup cheese, breadcrumbs, oil and garlic in a small bowl. Sprinkle the mixture on top of the tomatoes.
  6. Bake the tomatoes until the crumbs are golden and the tomatoes are soft, 25 to 30 minutes. Serve immediately.

Yield: 4 servings

Stuffed tomatoes are classic comfort food. Serve with a mixed green salad studded with garden-fresh vegetables. For vegetarians, omit the beef or turkey.

Notes:

Tip

To make fresh breadcrumbs: Trim crusts from firm sandwich bread. Tear the bread into pieces and process in a food processor until coarse crumbs form. One slice makes about 1/3 cup.

    changed a few things... sauteed yellow onion (instead of red) with garlic in 1T butter, put aside. Browned 1 lb ground beef and combined with onion and garlic for the last few minutes. Used grated parmesean cheese and topped with italian seasoned fine dry bread crumbs and a small amount of cheddar cheese. Left out the olive oil. Probably a little less healthy but it was really good.

    This recipe is really good!! I did sautee the onion (yellow) and garlic before adding it to the mixture though and I also added a bit of Italian seasoning to the turkey while it was browning. Also, I\'m not sure if it was just the tomatoes I had but it took about 45 min for them to get soft. But other than that the recipe is delicious !
    Once I made these stuffed tomatoes my boyfriend (who previously thought ground turkey was disgusting) ended up hooked on the ground turkey!!! TRY IT!
    Can\'t wait to try it with ground beef too!

    This popped up on my page yesterday and sounded so yummy! So, I printed it off and went off to the grocery store. Instead of plain brown rice, I got some prepared Multi-Grain Garlic Herb rice! I added parsley to my ground turkey while it was browning along with Lawreys garlic salt (California Style).... I also added a 3 cheese Itilian blend, My family went nuts over this! Thanks for sharing!
