1. Ingredients

  1. 1 plum tomato, diced
  2. 1 cup canned black beans, rinsed
  3. 1 cup fresh corn kernels
  4. 2 tablespoons cornmeal
  5. 1 pound prepared whole-wheat pizza dough
  6. 1/3 cup barbeque sauce
  7. 1 cup shredded mozzarella, preferably smoked mozzarella

2. Cooking Directions

  1. Preheat grill to medium.
  2. Combine tomato, beans and corn in a medium bowl. Sprinkle cornmeal onto a large baking sheet. Stretch the dough into about a 12-inch circle and lay it on top of the cornmeal, coating the entire underside of the dough.
  3. Transfer the crust from the baking sheet to the grill. Close the lid and cook until the crust is puffed and lightly browned on the bottom, 4 to 5 minutes.
  4. Using a large spatula, flip the crust. Spread barbecue sauce on it and quickly sprinkle with the tomato mixture and cheese. Close the lid; grill until the cheese is melted and the bottom of the crust is browned, 4 to 5 minutes.

Yield: 6 servings

The secret to a grilled pizza is having all your ingredients ready to go before you head out to the grill. Make it a meal: Toss the extra black beans, diced tomato and some avocado with prewashed salad greens and Cilantro-Lime Vinaigrette and dinner is on the table in no time.

    This pizza is worth the effort. First though, a few things needed to be done. Make sure you use a hickory-based BBQ sauce as that fits the pallete best, and I\'d recommend a charcoal BBQ, not gas. Once you put the dough on the grill, after a minute, peek under the dough and check to see how it\'s browning. You\'ll have to move the dough around the grill as the charcoal won\'t cook it evenly. Don\'t overcook. And don\'t worry. The dough doesn\'t stick like you\'d think it would.

    Also, I added red onion to this as it gave it more color. Finally, I used fresh homemade whole wheat crust from a bread machine recipe. To time it all right, I started the bread machine one hour before firing up the grill. After the pizza is done, I drizzled some BBQ sauce over the top for looks.

    What makes the pizza special is the smoked taste. It should go without saying that you need to increase the amount of cheese as it holds the chopped veggies better than what you see in the photograph. I used 2 C.

    We tried this pizza, but with a few changes. Two 12 inch pre-baked thin crusts were used, and they were cooked at 400 for around 10 minutes. Watch the bottom of the crust. The pizzas were awsome! Even the toddlers liked it. Two thumbs up, at our house.

    Great recipe and "elegant" pizza. We\'re vegetarians and love pizza with very little cheese. We are also trying to avoid charcoal resins or other toxins from contaminating our food so we used a hot oven at 400F for ten minutes. We mixed the corn meal into the dough and added red pepper flakes to the BBQ sauce for more bite!

    Great idea! I used local marinara sauce (don\'t like bbq), corn, black beans, capers, and real mozzarella. Forgot about the tomatoes. I added plenty of garlic and onion powder, plus some red pepper flakes. Mmmmmm. The trick is finding the best pizza crust possible, though! Definitely will remake and vamp it up.

    I made this pizza with some slight modifications...I baked it in the oven since that was easier and quicker for us on a weeknight. I also added some chicken. The pizza was really good. I would have never thought to add black beans and corn to pizza, but this was perfect for me, and even my non-health-conscious boyfriend liked it.
