    I will be substituting 1/4 C egg beaters for the egg, and leaving off the peanuts BUT I can\'t wait. I love Pad Thai and will love this MUCH healthier version even more.

    Regarding the fat....8 g is not that high at all. If you are worried about it though just make the same substitutions I\'m going to make and it lowers it quite a bit.

    8 g of fat is low considering the fact that maybe someone just started eating healthy and was going through multiple drive thru\'s getting the worst food possible. Give yahoo a break and if you has a lower fat recipie please share, if not please stop being so negative.

    8 grams of fat is low compared to the fat that is normally in Pad Thai.

    Fat is not evil - you need some in your diet. The food we normally eat from restaurants often has 20-80 grams of fat.

    People tend to go overboard when lowering the fat in their diet. It is important to cut back, but if you remove it entirely, you don\'t feel well, your food tastes icky, and you are likely to give up on the whole thing eventually.

    Yes this is a good one eh ? ... Pad Thai with shrimp or chicken is a good bet, and spicy-ness does not add calories or fat !!! .... down it wih a good Thai lager beer for a really filling and TASTY meal.

    I loved this recipe. I did find that less vinegar and more chili-garlic sauce was tastier though. And the noodles sort of bunched together, maybe I should have tossed them with oil or something?? All in all, the flavors and textures were great and I will definitely be making this again!!

    I love this recipe and 8 grams of fat is simply super healthy. The average recommended fat intake for a 2000 calorie daily diet is 65 grams per day. Do the math. That\'s about 1/8 of the total. Thanks for a great recipe.

    This recipe is fairly close to the ones I\'ve seen written by Thai chefs, except that white vinegar would be a better choice than rice vinegar so as not to make the dish too sweet. Also, "2 1/2 tablespoons" of fish sauce sounds excessive ( may be the result of a typo...); 2 1/2 teaspoons sounds more like it. You can always add some afterwards to taste!
    As for those reviewers who say that 8 grams of fat is too much, well, Pad Thai is not meant to be a slimming dish. If you take away the oil and the peanuts, it\'s not going to taste all that great. To reduce the amount of carbs though, try doing away with the noodles altogether. Instead, use an additional 2-3 cups of bean sprouts (on top of what\'s in this recipe) and saute them lightly, following the rest of the recipe. (this idea comes from a cookbook called "S

    You can lower the carbs on this dish by using substituting whole wheat linguine or one of the pasta\'s made by DreamFields. Also substitute Splenda for the sugar. With these substitutions it is STILL fabulous and now low carb too!

    I know for a fact that this is one of the most authentic "Pad Thai" recipes out there! If you take your time and follow directions, you will have a wonderful dish! Good Luck and............enjoy!!! YUMMMMMMM!

    It is possible I did something incorrect. The only ingredients I skipped were the peanuts and spicy chile sauce. I also doubled the recipe.

    The dish was just foul! The smell emenating from the fish sauce and vinegar was overpowering while cooking. Sometimes dishes taste better than they look, though. So, on to eating...

    But alas, it was simply awful. Like eating a bowlful of foul tasting salt. The sugar did nothing to offset the strength of the fish sauce. I could not think of a single restaurant pad thai (of which I have had many) that smelled or tasted like what I had. I had high hopes for the recipe but was greatly disappointed.
