For a satisfying last-minute supper, it's hard to beat a sweet potato zapped in the microwave. The fragrant filling of beans and tomatoes adds protein. Be sure to eat the skin, which is full of fiber, as well.
what a delicious side! i didn't expect it to be so good, and was leery about trying it. since only making dinner for two last night, i cooked one large sweet potato in the microwave (MANY fork pricks, not deep, was quick to do, did not compromise the cohesiveness of the potato at all), 8oz can black beans, 1 sm/med tomato, and 1/3 the spice as directed. extra sour cream. could have done without the cilantro, but i'm not a fan (husband is though and thoroughly enjoyed it). the contrasting flavours were surprisingly complementing....i may make them again tonight!
i suggest serving simply with sauteed, pan fried, or grilled chicken. a light, buttery entree makes it an enjoyable meal that's not overwhelming.
