This decadent, omega-3-rich cake was inspired by flourless Passover nut cakes. It's better if it sits overnight so the marmalade or jam can mellow with the chocolate and soak into the cake.
Tip
To toast and grind walnuts, spread them on a baking sheet and bake at 350 degrees F, stirring once, until fragrant, 7 to 9 minutes. Let the nuts cool on a plate then grind into a coarse meal in a food processor or blender.
This sounded fantastic... very little flour and I get to play with the seldom-used spring form pan. It's a glorified chocolate mousse cake. I had the thing in the oven close to 55 minutes because it didn't appear to have baked thoroughly... very difficult to judge. I let it cool for two hours as directed and it was still a mushy, undercooked mess in the middle. Sad to say... the trash compactor got to eat it and I've wasted several hours, lots of eggs, sugar and walnuts. Are mousse cakes always so difficult and does anyone have the secret to making sure it cooks thoroughly? HELP!
