  1. 2 bunches asparagus, tough ends trimmed
  2. 2 lemons, thinly sliced
  3. 2 tablespoons extra-virgin olive oil
  4. 4 teaspoons chopped fresh oregano
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon freshly ground pepper

2. Cooking Directions

  1. Preheat oven to 450 degrees F.
  2. Toss asparagus, lemon slices, oil, oregano, salt and pepper on a large rimmed baking sheet. Roast, shaking the pan occasionally to toss, until the asparagus is tender-crisp, 13 to 15 minutes.

Yield: 4 servings

3. Still Hungry?

Roast whole slices of lemon along with the asparagus for a beautiful look and sparkling, bright taste. Great with seafood, especially salmon or scallops.

  • Great but a little bitter

    My husband and I loved this dish and it was easy to make but the asparagus was a little bitter tasting. I think if you blanched them first and then continue cooking as instructed it may remove some of the bitterness of the vegetable.

  • Substitution for a Southwest Flavor

    I made this as a side to a dinner with a Soutwest flavor and substituted spicy blend Mrs. Dash for the oregano and it turned out quite well.
