This is your own food, you can add as little or as much salt as you want. The recommended amount is for taste, so if you need to use less or use a salt substitute go ahead. That\'s the beauty of cooking at home versus eating at a restaurant.
Please take a little personal responsability!

I used fat free milk and fat free cheddar cheese. The mac and cheese was served as a side dish (smaller portion) with a skinless boneless chicken breast. Top it off with a large green salad and it made a fine meal. Very tasty.

...don\'t flippin\' eat it. Seriously, 10 grams of fat for a main dish is not "loaded with fat"!!! Lighten up! Compare this to the homemade mac and cheese that many of us grew up on and this is a dream. Get over yourselves; this is not unhealthy and it tastes good. And for those who think this looks like dog vomit, I am left wondering what you feed your dog...

Add in meat of your choice, maybe some Chicken breast or some lean pork and you have a \'One pan Wonder\' meal. As for the sodium count, surely there are ways you can aleviate it a little, but not much. Salt is one of those things that are hard to get away from.

Please people. This mac & cheese was awesome. If you want low sodium, use less salt. If you want lower fat, use low fat cheddar cheese. This is a healthy receipe when compared to many other mac & cheese receipes out there, which I would never consider eating. This is easy to prepare and tastes delicious! And if you are watching your weight, use portion control! This heats up as a great leftover!

Very tasty indeed and healthy. If one is concerned about the fat content then substitute non fat milk(skim), fat free cheese and lo fat Parmesan cheese.
A "HEALTHY" diet is a lofat diet, not a NO fat diet...and moderate porportions. Salt and pepper are "to taste", meaning: none, a little, etc. Or get crazy! Experiment with herbs and spices or...

All of you complaining about fat and carbs-first, have you heard of low-fat cheese? There\'s no law that says you have to follow the recipe exactly. Many cheeses, like Kraft come in 2% fat varieties. They taste and melt just like full-fat. And yes, there are a lot of carbs, but there is a ton of fiber, too. If you add more vegetables or a salad or something and watch your portions, this can be very healthy.

I plugged the recipe into my recipe builder in weight watchers and it figured this dish at 8 points which good for a light meal. If you add chicken or pork that would need to be adjusted according to the points. But, on my plan and my friends we are allowed 20-25 points a day so this would fit in nicely. Yes, the points or calories could be lessened using low fat cheeses and skim milk. But with points this low you don\'t really need to.
I did check a serving of this against a serving of a popular boxed brand that was 7 points per 1 cup serving. But, that is without the benefit of broccoli which is so nutrititional. I also liked the idea of substituting other veggies. I am sure sweet peas would work well also. Good job!

This is a simply an example of what food should be. I am from Houston, Texas and have an 11 yr old boy and a 10 yr girl. They have been eating this mac and cheese with broccoli from early on. Any cheese will do, any pasta will do. The crap we get boxed is a shame. I am living and working in the Middle East, last year I ran into a colleague of mine and his wife at the supermarket. They also had their family living in country,. He kindly waved a ?box? of mac and cheese at me and with a Krafty smile advised a rare quantity of this commodity was actually available and that I should ?stock up? as his bountifully cart load indicated that he certainly had. I smiled and commented on the fine quality of the local beef. He was so happy with his find; I simply didn?t have the heart to tell him?

Ten grams of fat per serving is not unhealthy. This dish is healthy and nutrient rich.
It is amazing how people get stuck by reading politically motivated health results (veganism and vegetarians) who often denounce animal products as unhealthy.
Amazing, how are all the carnivores doing? Lions, tigers, and bears. Oh my.
We are senitient beings, but also animals, eating meat is not unhealthy. Eating too much of it, is.
Regular mac and cheese clocks up at 25 grams plus per serving. This recipe used whole wheat pasta, veggies, and low fat versions of dairy products.
Maybe if youi all cooled your jets and thought before judging you would realise..it is just a mac and cheese recipe. Not a place to state your politics.
Enjoy. Life is too short to take a hissy fit over a recipe.

I followed the recipe to the letter with one addition; I added 8 ounces of diced ham. After a 10 hour workday and a thirty minute commute home, the last thing I want to do is spend an hour in the kitchen whipping up dinner for my family. That said, we don\'t eat frozen pre-cooked food (too many "bad" fats, sodium, etc.). Well, this was just fabulous and filled the bill all around.........healthy, cheesy, warm, comforting and FAST!! From start to finish it was on the table in less than 30 minutes. Even my finicky son ate it with gusto. NOTE: It makes four VERY generous portions..........I reheated the leftovers for lunch today......it was just as good as last night, and still moist and creamy. A definite hit, and a recipe I\'ll be coming back to.

You inspired me...made it for dinner tonight. Changed a few things. Peas and Carrots instead of broccoli. Used fresh grated Paramasan, grated some Pepper Jack and Swiss instead of cheddar. Added some thin sliced smoke ham out of the freezer, added olive oil to the milk and flour mixture. Onion salt instead of galic. Is it the same thing? Well almost. Is delicious? Yes. Excellent! Will make two meals for wife and I.

First of all, fat free cheese is not cheese, its processed plastic. But more importantly, I agree with the earlier comment regarding the terrible comments. Instead of thinking of food as "fat" and "calories" think of it in terms of "high in nutrients" and then if you need to lose weight - LIMIT YOUR PORTION SIZE but KEEP THE GOOD INGREDIENTS. Its much more satifying to have less of something made with milk and real cheese than to have something made with processed cheese and empty calories.

We really loved this dish. I made it the night before, then heated it up the next day, so that flavors had time to blend.
The only thing I did differently was used non fat milk, and used a broccoli/cauliflower combo (16oz bag)...and used champagne mustard (from honeybaked ham store) in place of the dijon.
I think even some Kraft free cheddar would taste good...I\'ll try that next.
You may need to add a little more salt and pepper before eating.

This recipe sounds great. i cant wait to try it. I dont understand this so explain to me: SO many people on here are concerned with fat, sugar, calories, carbs, etc....well then why is America so overweight? doesn\'t make sense? I constantly here low carb, FF, low fat, etc., everywhere i go....at work, on sites, etc and yet 50% of the nation is overweight.....i dont get it. and by the way, just enjoy the recipe with the reg milk and reg ingreidnents and dont worry so much about fat content, etc. Life is too short to have a heated discussion over mac and cheese. lighten up people.

It says it is no bake not that it is no fat. They are not trying to give you a meal for a diet but instead just a meal. If you don\'t like it don\'t eat it.
And I think it looks delicious. Next chance I get I will try it, with proper portions the key to eating well.

I notice a couple of people said I used fat free cheese...ok number 1 this is better for kids than mcdonalds deep fried french fries and nuggets.
Number 2 you do not have to eat the entire thing watch your portion size.I do NOT recommmended fat free cheeses for this because if you have ever used them you will notice they do not melt!!!!!!!!!!!!!!!!!!it turns into a nasty consistancy if you do use it and try to melt it you will notice that.
So,instead of saying all the negatives about it enjoy the recipe for what it is tons of calcium and vitamins.what a delightful dish americans have loved for yrs.

This is a very healthy mac & cheese dish, some are making a huge deal about this not being healthy, well, mac & cheese in general is pretty unhealthy.
From this recipe, you get a large amount of fiber and protein, and probably some calcium from the milk and cheese used as well. As for the sugars, carbs, and fat; you need all of them to survive, for a dish of it\'s type, the amounts are pretty low. If you have such a problem with the carbs and fat, then walk your dog around the block a few times or take your kid to the park or something after dinner to get some exercise, it\'ll do you good.

This recipe is sound, but a question to the people touting 2 percent cheese and no fat cheese. Have you actually eaten cheese? I mean REAL cheese, not the "cheese food" products that come in a wrapper (which, in some cases tastes better than the contents) Try some real cheese, then try some of your no fat cheese, I am sure you might detect a difference. If you remove the fat from cheese, you dont have any cheese!
