Added more spices and it was excellent

I added red pepper, basil, and cayenne pepper along with the other spices listed on the recipe. I let it marinate for about an hour, and then I cooked the chicken in 2 tsp. olive oil for 5-6 minutes on each side. After it was cooked, I put fresh cilantro on top of the chicken and then covered it.
The taste and smell of the chicken was not very appitizing. It\'s an easy recipe and quick. The beans where terrific. Overall I won\'t ever make the chicken again, but the beans are an A+!
Like others, I enjoyed the beans, but found the chicken rather bland. Perhaps marinading the tenders in lime juice and adding a bit of cayenne to the rub would help.
And to the nitwit claiming that following this recipe will land you in the hospital: they\'re chicken tenders, not breasts. The cooking time in the recipe is fine.
This recipe is very easy to fix and I changed a couple of things. Instead of the spices, I used a package of McCormick Fajita mix. Cooked the chicken with the mix and then through in a large onion. Then cooked the onion, beans and a can of tomatoes and chilies. Mashed them, and added shredded cheese. Served it all with tortillas and sour cream. It was great!
the beans look very good, and can be adapted to use whatever bean you like. might be good with some garlic, or cayenne, or roasted pepper? the chicken doesn\'t look all that great, it sounds dry and bitter. i think a marinade would be better, with the spices, lime, plenty of fresh pepper, or cilantro. PLUS- look at the cut of meat before you cry salmonella. chicken tenders definately cook in a few minutes...
This is so quick and easy to make-my hubby does it all by himself. Everyone loves it. We serve it with warm tortillas, shredded lettuce, salsa and a little jack cheese and everyone makes their own soft tacos--YUM!
Having read all the reviews saying the chicken was not very good, I substituted it with chiftele, which is a tasty pork patty made by mixxing a package of ground pork, two eggs, a half cup of bread crumbs and a small diced onion. It added more work to the recipe and getting the patties thin enough to fry quickly was a challenge, but it made for a tasty meat dish that complimented the beans nicely. Everyone in my family liked the beans. Overall this meal was a nice success and we will definitely try it again. The beans were a nice change of pace from the pasta or mashed potatoes that usually comprise the starch portion of our dinners.
First, this is delicious and easy. When served with a salad I felt good about meeting my family\'s nutritional needs, my husband\'s craving for "comfort food," and my children\'s need for "normal" food.
Secondly, Canola Oil IS natural. It\'s from a plant, just like Olive oil is. Check out http://www.mayoclinic.com/health/canola-oil/AN01281 or look it up on Snopes.com, two reliable sources. I\'m a high school teacher and my students know not to believe everything on the internet without researching it further.
Canola oil is high both in monounsaturated fatty acids (59%) and polyunsaturated fatty acids (30%.) Both lower LDL ("bad" cholesterol) and raise HDL ("good" cholesterol.) Olive oil is also a good choice (it\'s higher in mono and lower in poly.) http://www.hsph.harvard.edu/nutritionsource/fats.html
Third, the only way to be 100% sure that poultry, meat, and fish are cooked to safe temperatures is to use a food thermometer. Color is not a good indicator of "doneness" because of the effect of oxygen on myoglobin. http://www.fsis.usda.gov/PDF/Thermometers_Are_Key_FactSheet.pdf Thermometers are cheap and readily available at your local grocery store.
So enjoy knowing you\'re being safe and healthy! Feel free to add more spices if you need more kick... spices are good for you.
Adding brown sugar to the mix will give it that \'extra something\' this recipe needs. And you DON\'T NEED THE SALT! Every recipe uses salt but if you\'re like me and cannot have salt in the diet...just leave it out and use some spices instead. If this is supposed to be a light meal, you have to address the salt issue-few ever do.
it\'s ok, but since I don\'t, I pretty much thought the entire recipe was nasty. Glad it wasn\'t expensive to make because my dog loved the chicken and the backyard critters got the rest.
I love to check in at yahoo for news, gossip, recipes and so on - but I have seen this recipe pop up so many times - yahoo has so many - why do they keep running this one?
