  1. 2 teaspoons ground cumin
  2. 2 teaspoons ground coriander
  3. 1/4 teaspoon freshly ground pepper
  4. 1/4 teaspoon kosher salt
  5. 1 pound chicken tenders
  6. 3 teaspoons canola oil, divided
  7. 1 small onion, chopped
  8. 1 jalapeno pepper, chopped
  9. 2 (15 ounce) cans white beans, rinsed
  10. 3/4 cup diced tomatoes with green chiles or tomato salsa
  11. 1/4 cup shredded Monterey Jack or Cheddar cheese

2. Cooking Directions

  1. Combine cumin, coriander, pepper and salt in a medium bowl. Add chicken and toss to coat.
  2. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add the chicken and saute until golden brown and just cooked through, 2 to 4 minutes per side. Transfer to a plate and cover to keep warm.
  3. Reduce heat to medium and add the remaining 1 teaspoon oil to the pan. Add onion and jalapeno and cook until beginning to soften, 1 to 2 minutes. Add beans, tomatoes (or salsa) and any accumulated juices from the chicken; cook, stirring often, until heated through, about 3 minutes. Transfer the bean mixture to a medium bowl and mash with a potato masher until creamy but still slightly chunky. Stir in cheese. Serve with the chicken.

Yield: 6 servings

3. Still Hungry?

Kids love this combination of refried white beans and chicken tenders. If you're concerned about making it too spicy, omit the jalapeno. Serve with extra cheese to sprinkle on top.

  • Added more spices and it was excellent

    I added red pepper, basil, and cayenne pepper along with the other spices listed on the recipe. I let it marinate for about an hour, and then I cooked the chicken in 2 tsp. olive oil for 5-6 minutes on each side. After it was cooked, I put fresh cilantro on top of the chicken and then covered it.

    The beans were good.

    Served it with a small salad, and lime slices.

    The taste and smell of the chicken was not very appitizing. It\'s an easy recipe and quick. The beans where terrific. Overall I won\'t ever make the chicken again, but the beans are an A+!

    Like others, I enjoyed the beans, but found the chicken rather bland. Perhaps marinading the tenders in lime juice and adding a bit of cayenne to the rub would help.

    And to the nitwit claiming that following this recipe will land you in the hospital: they\'re chicken tenders, not breasts. The cooking time in the recipe is fine.

    This recipe is very easy to fix and I changed a couple of things.
    Instead of the spices, I used a package of McCormick Fajita mix. Cooked the chicken with the mix and then through in a large onion. Then cooked the onion, beans and a can of tomatoes and chilies. Mashed them, and added shredded cheese. Served it all with tortillas and sour cream.
    It was great!
