This is how our Test Kitchen Manager's mom prepares her just-picked zucchini. Simple and delicious, the almost caramelized zucchini are topped with a Parmesan crust. Serve Mary's zucchini like a wedge of pizza, straight from the pan, with the cheese-side up.
To the last reviewer ... you won\\'t need to drain any oil. You only add just a couple teaspoons. That will keep it from sticking to the pan and also add a little extra flavor. You can drain the zucchini on a paper towel before adding the cheese, but I doubt there will be anything to drain. Sounds like a great recipe for all the zucchini in my garden!
