  • Loved it! Used alfredo sauce on itmy

We adapted the recipe. We sauteed onions and mushrooms and added the chicken. We covered in alfredo sauce and followed the directions on the recipe for cooking time.

My husband said it was the best thing he has ever eaten.

My picky three year old loved it!

  • This sounds good

I\'ll have to try this as I\'m a huge fan of Fennel. Only I think I\'ll remove the red pepper and add in Sundried Tomato instead. Will let you all know how it turns out...

  • Good flavor combination, but the recipe is way off in many ways.

The idea of combining chicken, fennel, and red pepper on a flatbread sounds good, but this recipe was way off in many ways.

First of all, the proportion of chicken to veggies was way wrong. I\'d say about a half of a large fennel bulb, one red pepper, and one pound chicken breast is a better ratio.

Second, the recipte calls for slicing each of the three items mentioned above, but they should be roughly chopped. Not chopping them made the dish difficult to eat.

Third, the sauteeing instructions are way off. I\'d recommend sauteeing your veggies about half-way first, then draining and setting them aside. Then sautee your chicken with a bit of salt, pepper, and maybe an aromatic seasoning of your choice. Drain the chicken and then recombine in the pan for a minute or so before putting on your flatbread.

I also think this recipe needs just a touch of liquid flavor before going in the overn. We used a touch of alfredo from the jar, but a vinegar and oil combo would also work.

MOST IMPORTANTLY, the recipe calls for a 500 degree oven for 10-15 minutes. We did 500 degrees and checked on them at 9 minutes and the flatbreads were burnt. I\'d say 5-7 minutes top, just enough to melt the cheese and make the flatbread slightly crisp.

  • Very versatile

Yummy and easy. My grocery was out of fennel, so I took the advice of previous posters and added oil-packed sundried tomatoes briefly to the skillet. Also added some black olives. Simple and delicious. Great for a quick weeknight meal. And best of all: only one pan to wash.

  • Great pizza

This is a really good pizza--the only thing I reccommend to change it is to brush the pitas with EVOO before adding chicken

  • Mmmm...

I would bet this would be good with other combos of veggies too: black olives, sauted broccoli, sliced artichoke heart, mushrooms, etc.

I like Jenna\'s idea of adding the sundried tomato...but I\'ll keep the red pepper too. All in all, sounds like a really simple but satisfying recipe for a busy work night.

  • I like pie

    I like pie
Some times I like it with tomatoes

This has been by far the most intelligent post on the page. If you are worried about tomatoes being bad for you, you need to get a life, every thing is bad for you, even air. Im getting oxidized right now and Im perfectly fine with it.

  • Awful Recipes!

    aorphia.talkspot.com - July 28, 2009 12:02:56 AM PST
Most all of those food recipes by the days of the week shown are awful. Seems like someone forgot about Grandma\\'s old fashion recipes that were every bit yummy, even to the very last bite. How about listing a good southern fried chicken or baked chicken recipe, hamburger steaks with onion gravy, a tuna fish cassarole with tator tots and chedder cheese, smothered or pan fried porkchops, a homemade pizza with angel hair pasta on the side, stove top cooked roast beef in a big pot simmered for a few hours until real tender and the last day, either some deep fried catfish or baked. Now these are good hearty and filling food recipes. Many times when you see Yahoo or some other website pushing recipes with all the hype, it\\'s because they are pushing name brand products for food companies. Many of you may not know this, but off brand products are in fact created by name brand companies. The reason why they do this, is so that the store will be able to offer a no name brand or a store brand, all the while the food manufacture is still making there money either way, so... why spend all your hard earned money on name brand foods, when non brands or store brands are much cheaper and taste just as good.

  • Carcinogens don

    Mark F - September 6, 2007 01:37:45 PM PST
    Recipe sounds wonderful.

Life is full of carcinogens. Cigarette smoke, one of the more carcinogenic substances known, takes on the average of twenty years mainstream exposure to substantially increase the risk of lung cancer. Any risk from carcinogens in a sundried tomato would likely be cancellled out by the lycopene and antioxidants in the tomato.

Enjoy the tomato! Life\'s too short to worry about being hit by lightning...

I was told by a nutritionist that sundried tomatoes contain carcnigens.
