1. Ingredients

  1. 2 lemons
  2. 4 large artichokes
  3. 1 tablespoon extra-virgin olive oil
  4. Salt and freshly ground black pepper, to taste

2. Cooking Directions

  1. To prepare artichokes: Fill a Dutch oven with water; add the juice of 1 lemon. Trim leaves from the top of an artichoke. Remove the outer layer(s) of leaves from the stem end and snip all remaining spiky tips from the outer leaves. Trim an inch off the bottom of the stem and use a vegetable peeler to remove the fibrous outer layer. As each artichoke is prepared, drop it into the lemon water to prevent it from turning brown.
  2. When all the artichokes are prepared, cover the pan and bring to a boil. Boil until the base of the stem can be pierced with a fork, 12 to 15 minutes. Transfer to a cutting board and let stand until cool enough to handle, about 10 minutes.
  3. Meanwhile, preheat grill to medium. Slice the artichokes in half lengthwise. Scoop out the choke and first few inner layers in the center until the heart is revealed. Brush each half with oil and sprinkle with salt and pepper. Grill the artichokes until tender and lightly charred, about 5 minutes per side. Transfer to a serving platter, squeeze half a lemon over them and garnish with the remaining lemon half cut into 4 wedges. Serve warm, at room temperature or chilled.

Variation

For boiled artichokes, add 5 minutes to the cooking time in Step 2. Serve whole or cut in half and scoop out the chokes.

    Haven't tried this recipe yet...but I have never heard of using butter or mayo as a dip either. My mom got me hooked on artichokes as a kid and we scraped off the "meat" on the leaves and ate the heart-the best part-but our dip is parmesean cheese! Yum!! So we dip each leaf in the grated cheese as we eat it, then when we get to the heart we cut it up and toss it in the cheese!! ohh soo good! Think I may treat myself later this week!

    i got hooked on fresh artichokes 50 years ago,i never trim the leafs just the stem,i rinse them out,toss them in a pot of boiling water,when a fork goes in the stem easy its ready,i only use salted butter as a dip as magirine just wont do,to watery,i nuke the butter but at a low level so as not to burn it,i peel,dip and skim the meat off the leafs,when i get to the heart i clean the fuzzy stuff and cut up the remaining meat and toss it in the bowel with the remaining butter,then i have to fight my kids for the goodies,got them hooked also like my mom did for me 50 years ago,,,

  • Basically Steamed Artichokes

    This recipe is basically for steamed artichokes since most of the cooking is done in the Dutch oven. The only part of the artichoke that gets any "grilled" flavor are the parts that touch the grate... which is not much when you consider that most of the artichoke leaves do NOT touch the grill grate. Still, if you want that flair for your party attendees, this is a nice summer touch.

    I am addictd to fresh artichokes!! I eat them a few times a week!! With Garlic and butter- When I boil my artichokes I sometimes add some minced garlic cloves- the combination is delicious!!!

    Hummm, I have never had an artichoke w/ out the mayo! Is that not the way everyone else eats them? A little plop of mayo to dip the leaf into
