Lime-Jalapeno Chicken

    I made this for dinner last night, and I will be making it again! The flavor relative to how easy it is to make the marinade and cook the chicken makes this is a great recipe. I let it marinade over night, not just for the hour. I think this is the best way to do it, because it had just the right amount of flavor. An hour would not do it justice. The chicken came out quite tangy, and I loved the flavor. Even my husband, who is so picky he doesn\'t eat condiments, enjoyed the chicken. Next time, I will add some cilantro to it because it seems like it would be a nice complement.

    I like the sound of the chicken itself but the picture is a little decieving - can we have what else is in that wrap (mango salsa? guacemole?) because it looks tasty!

    just needs to be spiced up a little - to Sue B: you certainly would be allowed to over cook the chicken if you like it that way, I prefer it tender and juicy, to each their own

    it was quick and easy, and none of the flavoring goes away when you grill it. it smells good, too.

    if you try this, use pre-squeezed lime juice in a bottle because squeezing about 4-5 limes is pretty time-consuming.

    The chicken was great, served it with black beans and rice and friend green plantains. I think next time will add a bit more lime juice and a bit more jalapeno - just to give it a bit more kick/flavor.

    I was just wondering why you think that it is safe to grill the chicken for only 3-4 minutes on each side. That does not even sound safe!~SueB
